Di ricette ne ho trovate un sacco sul web, ma come sempre poi me la sono adattata e ne sono uscite queste briochine morbidissime. ENSAḮMADAS DE MALLORCA Vale a dire: 250 gr di farina Manitoba 250 gr di farina 00 175 gr di latte di soia 12 gr di lievito di birra 1 cucchiaino di malto d’orzo 2 uova 75 gr di zucchero semolato 6 gr di sale 2 cucchiaini di estratto di vaniglia 2 cucchiai di olio di riso per farcire: lardo o burro o crema pasticcera per guarnire: 1 tuorlo + goccio di latte zucchero semolato e zucchero a velo Sciogliere il lievito nel latte di soia a temperatura ambiente con il malto d’orzo. Nella planetaria mettere tutta la farina ed al centro versare il latte. Azionare la planetaria poi aggiungere 1 uovo, metà dello zucchero, lasciare impastare poi di nuovo l’uovo ed il restante zucchero ed il sale. Unire l’olio e lasciare impastare prima di inserire a filo l’estratto di vaniglia. Lasciare andare la macchina finchè non si otterrà un impasto liscio ed omogeneo. Coprire con uno strofinaccio e far riposare per 30 mins. Rovesciare sulla spianatoia, fare un giro di pieghe a 3 ed ottenere una palla che metterete in una ciotola coperta con pellicola e dopo altri 30 mins metterete in frigo per tutta la notte (la notte porta consiglio!!!). Il mattino seguente togliere dal frigo e lasciare tornare a temperatura ambiente per almeno 1 ora ed anche più. Dividere l’impasto in palline da circa 100 gr (se possono fare anche più piccole!!! Dipende da quante ne volete fare e da quanto tempo avete a disposizione!!!!) e lasciatele lievitare altri 30 mins. Oliare bene il piano di lavoro e stendere ogni pallina in un rettangolo il più sottile possibile, quasi a renderlo trasparente. Spennellare con lardo o con burro morbido o con crema pasticcera (io ne ho fatti 3 con burro bavarese, 3 con crema pasticcera e 3 con lardo!!!), le originali sarebbero con lardo!!!! Arrotolare fino ad ottenere un cilindro, foderare con carta forno una teglia e dare al cilindro la forma di una chiocciola lasciando però le spire leggermente distanziate (si uniranno in lievitazione). Esaurite le palline coprire con pellicola e mettere a lievitare (c’è che li fa lievitare tutta la notte, io le ho lasciate per qualche ora finchè non sono raddoppiate). Preriscaldare il forno a 200°, intanto sbattere il tuorlo con un po’ di latte, spennellare l’ensaïmadas, spolverare con zucchero semolato poi zucchero a velo (le ricette originali, almeno quelle che ho letto spennellavano l’ensaïmadas con del lardo fuso) e via in forno a 200° per 13-15 mins. Mettere a raffreddare su una griglia e spolverare con zucchero a velo. Quelle ripiene con la crema pasticcera sono lievitate molto di più ed erano più sofficiose, ma in tutti e tre i casi erano buone e morbide. Si conservano chiuse nei sacchetti, ma se vanno mangiate tutte meglio, così si potrà preparare qualcos’altro!!!! Il gioco è fatto, ed il piatto è servito!! Braci&Abbracci
