How do you revamp a classic? Turn all the flavors of a cacciatore into a great tasty marinade, and then roast the marinated chicken on a sheet pan to speed up the cooking time. Marinate the chicken in the morning, and since it only needs 30 minutes in the oven, this is totally doable for a weeknight. I've boosted the seasonings with smoked paprika, which isn't traditional but really amps up the flavor. It's even better served over bread salad (as they do at San Francisco's famed Zuni Café).

Get ready to have every other type of rice ruined for you. If you’re a stranger to the magical world of crispy Persian rice, or tahdig, let me tell you it’s a game changer. Literally translating to bottom of the pot, tahdig infuses long-grain rice with fragrant saffron and tons of butter to create a luxurious dish begging to be cracked. Given the fact that Nowruz (Persian New Year) is right around the corner, there’s never a better time to give this recipe a try! When I met my husband, I was thrusted into the world of Persian cooking, discovering a new frontier of rich stews and vibrant rices. I became determined to master tahdig for him, so I started shadowing his mother and aunt in the kitchen to learn their ways. While I might not be trying to become an ASMR influencer, I’ve now dedicated a huge chunk of my Instagram to videos documenting the sounds of crunchy rice (give the people what they want!). To put it simply, you par cook rice, then mix some with yogurt, egg, saffron and butter to lay on the bottom of the pot before you add the rest of the rice. You then rely on sound and smell to tell when the bottom has become golden brown perfection. This variety (my husband’s favorite) adds sliced potato first for a crispy starch on starch masterpiece that you’ll be picking at long before it hits the table to serve with any Persian stew or kebab (maybe my recipe for Fesenjan, a Persian pomegranate and walnut stew?!). Here are some tips to help you find success on your first go: 1. Rinse your rice well before soaking in salt water. You want to get off any excess starch, as well as letting the rice start to absorb some of that salty water. 2. Use a cheap non-stick pot! It always works better for an even crust that never sticks. 3. Trust your other senses! This is a Bird Box moment, so you want to make sure you hear a slow and steady sizzle and then pull it when the rice smells toasted and fragrant (it will resemble fresh popcorn!). Give potato tahdig a go. There’s never a better time for starch madness.

Chelsea’s famous kumara & bacon salad This recipe is from the salad section in 2017’s bestselling cookbook in NZ, Scrumptious. Seriously, you have to make it. Technically it’s not quite famous at the time I write this – but I know it will be! It’s a salad like no other, a guaranteed hit whether you’re serving it up at home or taking it to a picnic, BBQ or a pot-luck dinner. The textures and flavours are sensational. This is equally good served as a warm or chilled salad. Prep time – 15 minutes Cook time – 20 minutes Serves 6 Ingredients Oil, for frying 1kg kumara (purple, or a mixture of orange and purple) 250g bacon, chopped (free-range is best) ¾ cup chopped walnuts ½ a red onion, finely sliced ½ cup freshly grated Parmesan ¾ cup cooked peas, cooled ¼ cup good-quality mayonnaise ¼ cup sour cream (or use extra mayo) ¼ cup finely chopped parsley, plus extra to serve ¼ tsp white pepper ¼ tsp black pepper ½ tsp salt Squeeze of lemon juice Method Peel the kumara and chop into 4cm pieces. Add to a large pot of salted water, bring to a simmer and cook until tender – about 10-15 minutes. Drain and allow to cool to warm. While the kumara is cooking, add some oil and the bacon to a frying pan over a medium heat. Fry for about 15 minutes until crispy. Drain on paper towels and discard the extra oil. Add the warm kumara to a large bowl with the bacon, walnuts, red onion, mayonnaise, sour cream (or extra mayo), parsley, Parmesan, peas, peppers and salt. Squeeze in the lemon juice and toss gently to combine. Serve garnished with extra parsley, or refrigerate until needed. It’s nice warm or chilled and will last a couple of days in the fridge. (Tip – I sometimes like to add half an avo if I have one handy, just before serving).

Learn how to make the perfect frittata with this comprehensive guide! This recipe assumes you're cooking the vegetables in your skillet—if you're using leftover vegetables for the stovetop option, simply warm them in the skillet before adding the eggs. Recipe yields 1 large frittata or 18 mini frittatas (approximately 8 servings).
I don't bother to sear the meat, which means you really need skinless portions; unbrowned chicken skin is not pretty. If you're not buying thighs, but thigh fillets, then it is probably more helpful to think in terms of boned weight, rather than the number of portions: go, here, for about 1.25 kilos. I tend not to add any cream to this first time around but, if I have a small amount left over, I add a little double cream and turn it into a pasta sauce. I like to eat my Coq au Riesling as they do in Alsace, with a huge pile of buttered noodles. Whether you add cream or not is entirely up to you. I was on a bit of a garlic oil rampage when I was writing Nigella Express, but you can use regular olive oil instead, mincing in a couple of garlic cloves once the leeks have softened a little in the pan. For US cup measures, use the toggle at the top of the ingredients list.
