I can't count how often I find myself stirring a pan with some mince in it, day to day. Not that this is anything to apologize for: it's easy, quick and comforting. I could probably measure out my life in chilli bowls, and that's no bad thing either. This recipe draws again on a favourite time-saving practice of mine, which is to start off with some paprika-piccante chorizo sausages that give off a fiery orange oil in which to sear and season the mince. Tex-Mex custom decrees that chilli be eaten with — among other embellishments — a handful of grated cheese thrown on top. This is merely an impatient rendering of the same, whereby you simply chop or tear some mozzarella and stir it in to the chilli in the pan, just long enough to let it melt into the meat. If you've got the time, and have managed to think ahead, you could put some baking potatoes into the oven to provide a substantial vessel for the cheesy chilli (it will also make the chilli go further) but I don't think anyone would argue with a bowl of tortilla chips alongside, or indeed a beautiful loaf of bread, freshly sliced for dunking. All I'd add further would be a crisp green salad, sharply dressed and a small cup of chopped fresh coriander for all-round anointing. Set apart from the pack by a few noteworthy ingredients, this carrot ginger soup recipe is a warming dish we come back to again and again.
This is one of those thick, wintry soups made spiky and fresh with chilli, ginger and lime. It has the hit of a hot and sour soup, but the nubbliness of the split peas gives those clear, piercing flavours an unfamiliar edge, while adding cosiness at the same time. For US cup measures, use the toggle at the top of the ingredients list.
Butter free, this sweet potato, garlic and chilli soup is ideal for vegans or just soup lovers alike. Filling and giving you more than your daily recommended amount of vitamin A, its just full of delicious flavours from naturally sweet ingredients.
When I asked Dr. Antonia Trichopoulou, a Mediterranean diet expert, how I could get the small American city of Albert Lea, Minnesota—famous for meatpacking—to eat more vegetables, I knew I had come to the right person. We were sitting at Thea’s Guesthouse, in front of one of her amazing spreads of Ikarian cuisine. Dr. Trichopoulou paused for a moment and then gestured to the food and said, “Feed them.” I had my marching orders, so I searched for a recipe that people would like. Several months later, I invited the entire city of Albert Lea to dinner. More than 2,200 people showed up as chefs demonstrated how to make this Ikarian stew in two enormous boiling cauldrons. For these people, vegetables were typically the orange flecks you see in Hamburger Helper. I was nervous to serve them a 100 percent plant-based meal. Less than an hour later, the two pots were completely empty and the city had taken its first step to changing its diet for the better. After just one year, participants added an estimated 2.9 years to their average life span, while health care claims for city workers dropped 49 percent. This city experiment was the pilot for what is now Blue Zones Project, which has expanded to 47 communities across the United States. Here’s the exact recipe, which also happens to be one of our reader favorites.

Take a food tour through Italy in your own kitchen with Giada's Italian soup recipes! While it might not be on the forefront of people's minds when they think "Italian food," soup is actually a huge staple in Italian cuisine. With the temperatures slowly starting to dip, there's no better time than now to embrace the season for soup - so why not get to know these classic Italian soup recipes while you're at it? Giada's Italian soup recipes are essentially a tour through her childhood, as most of these recipes were introduced by her family - so get ready for some fantastic recipes, and a little bit of history while we're at it. Italian Wedding Soup Funny story - the name of this soup might have you thinking it's traditionally served at weddings, but that's not quite where the name comes from. This soup is said to have originated from Naples, and the Italian name is "minestra maritata" - which roughly translates to "married soup". The term "married" refers to the marriage of the flavors and ingredients - not nuptials! Regardless of the name, this soup is ultimately comforting with a flavorful broth, juicy meatballs and greens. Pappa Al Pomodoro If you ever wondered what to do with lots of stale bread, this is your answer. Pappa Al Pomodoro, otherwise known as "Tuscan Bread and Tomato Soup," is exactly what it sounds like - lots of bread and tomatoes! The bread not only gives this soup lots of body and heartiness, but as it cooks, it develops a rich and velvety texture. With lots of aromatic vegetables and herbs as well, this is a truly delicious and comforting soup that Giada's mom always made when she was a kid. Pastina Soup Assimilating to American culture posed as a challenge when Giada was a young kid, and this soup magically bridged the gap. "The one exception was an old familiar friend that came in an iconic red-and-white can: Campbell’s Chicken and Stars soup. I doubt my buddies’ parents had any idea that this childhood classic, every bit as 'all-American' as tomato or cream of mushroom as far as they were concerned, was actually based on an Italian recipe that I adored and reminded me of home." - Giada Ribollita Soup Like Pappa al Pomodoro, Ribollita is another soup of Tuscan origin that includes bread in the ingredient list. It's a hearty stew of veggies and beans, though recipes for this potage vary greatly from family to family. In Giada's version, she likes to add pancetta at the beginning, and break up spaghetti and add it in at the end - it's the way her family always made it! Italian White Bean, Pancetta and Tortellini Soup This dish is often known as Tortellini en Brodo, or just "Tortellini in Broth". While this soup is an Italian classic, it has tons of variations. Sometimes it is as simple as literally just tortellini and broth - and if you search, you'll find all types of vegetable combinations in this soup. In Giada's recipe, she likes to incorporate creamy white beans, pancetta, carrots and swiss chard for a nutritious and comforting dish. Pasta e Fagioli The funny thing about Pasta e Fagioli is people might not recognize the dish based off of reading the name - in the states, it's lovingly known as Pasta Fazul! The only thing this soup needs to truly be "Pasta e Fagioli" is pasta and beans, hence the name. This soup is found all over Italy, prepped in all sorts of different ways. Giada's recipe uses red kidney beans, and pancetta gives it lots of savory flavor. Simple Stracciatella This Italian classic is traditionally comprised of broth and a mixture of eggs. "Stracciatella" means "to shred" or "shred," which is why you'll often see it refer to other things in Italian cuisine, too - like gelato stracciatella (in which case it's usually referring to chocolate!). "The beauty of this soup is its simplicity, because it is mild yet flavorful. It’s what my mom would make for my brother, my sister, and me when we were under the weather. It’s so soothing and comforting, like a big hug. It’s also great for breakfast!" - Giada Winter Minestrone Minestrone is a beloved Italian soup, and one of the most recognizable ones in the US. It's a thick, hearty stew with vegetables, and often with pasta or rice. In Giada's version, however, the starch comes from potatoes and cannellini beans. The star of this dish is the rind of Parmigiano - it imparts so much savory, nutty flavor to the soup. Grab some crusty bread and get ready to sop up the delicious broth of this classic.

There are few more welcome sights than a big vat of chilli. The cornbread topping is a glorious golden touch, that everyone can crumble into the spiced meat as they eat, for ballast and crunchy contrast. It makes your life easier and the chilli better if you make the meat up in advance, adding the topping and baking the lot just before you serve. For US cup measures, use the toggle at the top of the ingredients list.
Roasted portobello mushrooms stuffed with cheese, herbs and breadcrumbs stand in for the traditional Gruyère toast you'd find on top of a crock of French onion soup.

This is an almost instant, super soothing supper made easily from store cupboard ingredients. I have stipulated two tablespoons of Thai green curry paste, but do be prepared to add more if you like a bit more fire. If you want to adjust this a little, consider adding some little cooked prawns; just make sure they’re heated through before serving. The chopped red chilli I add on serving is not obligatory, but I like the glossy red confetti! And please read the Additional Information section at the end of the recipe before proceeding. For US cup measures, use the toggle at the top of the ingredients list.
