Primer dia de primavera, encara que no o sembli, al menys aquí sembla que haguem tornat a l'hivern! Així que us porto una entrada ben primaveral. Ja l'he publicat altres vegades la melmelada de violetes, és un clàssic a casa meva cada primavera des de fa uns anys, ens encanta anar d'excursió a recol.lectar les flors i despres cuinar-la a casa, una melmelada casolana increible, amb una aroma molt fina, però deliciosa! Ens agrada molt i la menjem de moltes maneres, untada a torradetes amb mantega,amb madalenes o pa de pessic i és molt bona amb pancakes, com en aquesta recepta de tortites amb melmelada de violetes tot i que a mi m'agrada especialment la melmelada de violetes amb recuit, trobo que es la menera d'apreciar millor el seu delicat aroma i sabor. Si us decidiu a preparr aquesta melmelada assegureu-vos de que les violetes són aptes per consum humà, compreu-les a herboristeríes o en botigues especialitzades. Les que s'agafen al bosc es poden menjar amb tranquil.litat però les cultivades us heu d'assegurar que no tenen herbicides, pesticides ni res per l'estil... Us animeu a fer melmelada de violetes? No la trobeu moníssima? A mi m'encanta! Primer día dela primavera aunque no lo parezca, al menos aquí ¡parece que hayamos vuelto al invierno! Así que os traigo una entrada bien primaveral. Ya he publicado otras veces la mermelada de violetas, es un clásico en mi casa cada primavera desde hace unos años, nos encanta ir de excursión a recolectar las flores y después cocinarla en casa, una mermelada casera increíble , con un aroma muy fina, ¡pero deliciosa! Nos gusta mucho y la comemos de muchas maneras, untada en tostadas con mantequilla, con magdalenas o bizcocho y es muy buena con pancakes, como en esta receta de tortitas con mermelada de violetas aunque a mí me gusta especialmente la mermelada de violetas con requesón, encuentro que se la manera de apreciar mejor su delicado aroma y sabor. Si os decidís a preparar esta mermelada aseguraos de que las violetas son aptas para consumo humano, comparadlas en herboristerías o en tiendas especializadas. Las que se cogen en el bosque se pueden comer con tranquilidad pero las cultivadas hay que asegurarse de que no tienen herbicidas, pesticidas ni nada por el estilo ... ¿Os animáis a hacer mermelada de violetas? ¿No la encontráis monísima? ¡A mí me encanta! INGREDIENTS un got ple de petals de violeta (cal separar els petals de la resta de la flor) un got ple de sucre un got ple d'aigua unes gotes de suc de llimona INGREDIENTES un vaso lleno de pétalos de violeta (hay que separar los pétalos del resto de la flor) un vaso lleno de azúcar un vaso lleno de agua unas gotas de zumo de limón RECEPTA Barregem l'aigua amb el sucre, les gotes de suc de llimona i els petals de violetes a una cassola amb el fons gruixut. Amb el minipimer triturem una mica la barreja però no del tot, es maco que es vegin alguns petals sencers. Ho escalfem a foc una mica viu fins que comenci a bullir, aleshores abaixem el foc i ho deixem al mínim que es vagi fent, remenant de tant en tant. Ha de bullir fins que hagi quedat com un almívar espès, tingueu en compte que en refredar-se espessirà encara més. jo ho vaig tenir uns vint minuts. Abans que es refredi cal posar la melmelada a un pot que es pugui tancar hermètic i tancar-lo. En refredar-se farà el buit, com que és molt poca quantitat no cal esterilitzar-lo, així aguanta setmanes a la nevera. Si calguès que es conservès durant mesos si que seria millor esterilitzar el pot, un cop tancat el cobririem d'aigua i ho fariem bullir uns vint minuts més. RECETA Mezclamos el agua con el azúcar, las gotas de zumo de limón y los pétalos de violetas en una cazuela con el fondo grueso. Con el minipimer trituramos un poco la mezcla pero no del todo, es bonito que se vean algunos pétalos enteros. Lo calentamos a fuego algo vivo hasta que empiece a hervir, entonces bajamos el fuego y lo dejamos al mínimo que se vaya haciendo, removiendo de vez en cuando. Debe hervir hasta que haya quedado como un almíbar espeso, tened en cuenta que al enfriarse se espesará aún más. yo lo tuve unos veinte minutos. Antes de que se enfríe hay que poner la mermelada en un bote que se pueda cerrar hermético y cerrarlo. Al enfriarse hará el vacío, como es muy poca cantidad no es necesario esterilizarlo, así aguanta semanas en la nevera. Si hubiera que se conservara durante meses sí que sería mejor esterilizar el bote, una vez cerrado lo cubriríamos de agua y lo haríamos hervir unos veinte minutos más.

Once again, a wildflower for you to enjoy. This is one of my favourite spring wildflowers and it's easy to find here in the Maritimes.. in fact, they grow right on my back lawn. Hubby, the lover of "picture perfect" lawns, would happily spray to get rid of these "weeds" but I plead with him each year to "leave my violets alone!!" This is viola cucullata, better known as the Purple Violet, the floral emblem of New Brunswick. Also known as Blue Violet and Wood Violet, it grows in damp woodlands, meadows, fields and along roadsides. And in my backyard (yay!!) It is a small low- growing plant, the blooms being about 1/2" - 3/4", but if left alone, it will develop into a nice clump. I'm thinking of digging a few out of the lawn and planting them in my perennial bed. The purple violet was adopted as the official floral emblem of N.B. in 1936, and is also the state flower of Illinois, Wisconsin, Rhode Island and New Jersey! It has no scent but the young leaves and the flowers are edible. You can see the wonderful veining in the petals and the tiny white "fringe" in the throat of each little blossom - such beauty! I was back in Wexford again today, the sunny south east of the country. I was on the Great Saltees for 9.00am and off by about 11.00am due to the fact that there were very few migrants on the island. I did manage to get a few shots of the breeding Oystercatchers and their chicks, but did not bother with the seabirds. As soon as we got off the boat at Kilmore Quay we headed for Tacumshin where there was a great selection of birds. I managed to clock up for the day, Forster's Tern, Little Gulls, two Glossy Ibises, Red-footed Falcon, Montague's and Marsh Harriers, Bearded Reedlings and Garganey ducks along with all the other common birds in the lake. There was no sign of the Red-backed Shrike and I ran out of time to search thoroughly for the Little Ringed Plover.
