Let's get started Recipe details Preparation time - 8-10 hours Cooking time 2 minutes Servings 1-2 Ingredients required 500 grams homemade fresh curd - preferably made with full fat milk 4-5 tbsp sugar or as preferred 4-5 tbsp Mango Pulp 1-2 tbsp warm milk 6-8 saffron strands Pinch of cardamom powder For garnish 1-2 Pistachios - finely chopped 1-2 almonds - finely chopped 1-2 Saffron strands Method Quick recap ✅Step 1. Mise en place Mangoes - Puree it ◾In a medium saucepan, combine sugar and ¼ cup water. Bring it to a boil. Continue stirring until the sugar is completely dissolved. Leave it to cool down a little. Add the chopped mango pieces. Allow it to cool down completely and then keep in the freezer compartment for 20-25 minutes. Blend until it becomes smooth and creamy. Separate out the curd ◾Set a strainer over a large mixing bowl and line it with muslin cloth. Place the curd into a muslin cloth, wrap the muslin cloth and hang it overnight over a bowl in a refrigerator and drain the whey completely from the curd. Saffron ◾soak the saffron strands in 2 tbsp warm milk. ✅Step 2 Aamrakhand preparations ◾Take hung curd in a mixing bowl, add saffron soaked in milk.
