500 grams potato, peeled and cubed 1/4 cup All- purpose flour 1/2 tbsp salt 1/2 tsp garlic powder About 100 grams mozzarella, cubed 1 egg 1/2 cup panko breadcrumbs Oil for frying 1. Peel and cube the potatoes. Boil water in a pot. 2. Boil the potatoes until fork tender. 3. In a bowl, mash the potatoes with a fork until smooth then add the flour, salt and garlic powder. Mix well. 4. In one bowl whisk the egg and put the breadcrumbs in a separate bowl. 5. Scoop out the potato mixture and place a cube of mozzarella in the middle. Roll it into a smooth ball. 6. Coat the balls in the egg and then cover with the breadcrumbs. 7. Fry in oil heated to 350F until golden brown. Serve with your favorite dipping sauce.
