Made with puff pastry that’s sandwiched with a smooth, gooey chocolate filling, this blown-up version of a chocolate croissant skips the hours of laminating dough. It can be assembled in about 20 minutes and makes a deliciously messy brunch-stopping pastry.

This buttery cake is perfect for dressing up as a special dessert with cream or ice cream or just simply popped in the lunchbox. Its versatility makes it a winner no matter the occasion! The juices from the pair infuse into the cake to create an added depth of flavour to the lemony cake. Choose pears which are not too firm, but have just a little ‘give’ when gently pressed. The lemon could be swapped out for vanilla if you prefer – add 1 tsp vanilla extract in place of the rind, and swap the juice for another tablespoon of milk.

No pasta, no problem! In this dish, zucchini does all the work. Using a vegetable peeler makes thin, pliable strips of zucchini that create the perfect little dumplings of ricotta filling - no need to cook them beforehand. The cheesy filling gets tons of savory flavor from chopped prosciutto - but feel free to omit to keep it vegetarian! Comforting and cheesy but still bright and fresh tasting, this is a great dinner all year long.

Several years ago I was at a local farmer’s market, looking over a baker’s spread, when a small round pastry caught my eye. It was neatly stacked on its fellows, each crimped, golden, and speckled with grains of sugar. What’s that? I asked the amiable proprietor. Even from my side of the table they looked heavy and firm, like little pats of butter. English Eccles cakes! he said, in a rolling British accent.

And old Rumford Cookbook. I devoured this tiny recipe book not for the recipes, but for the little traces left behind. The drips, spatters and pools of ingredients on the pages made it clear which recipes were referenced the most. I imagined the owner's name was something like Mabel, or Hazel, or Pearl or maybe Anna. Yes, Anna.
Based on my easiest Nutella cookie recipe, these Nutella cookies are eggless and a little healthier. They still taste just as good (maybe even a little better!) than the original.

Everybody loves a Mars bar! In fact, they were recently voted the world’s second most popular chocolate bar - pipped at the post by Cadbury milk chocolate (personally, I think it was rigged!). So, it’s little wonder that when melted down with butter and mixed with rice bubbles, the result is amazing. This Mars bar slice recipe is our favourite as it has the sneaky addition of golden syrup, which gives the slice an extra buttery caramel flavour. Another reason we love this recipe is that not all the Mars bar is melted. Some is reserved, chopped and stirred through the mixture, upping the mars bar element and providing extra texture. Genius, right?
