I’ve been dying my hair with henna for about two years now, and I’ve got the process down to a relatively tight science, give or take a little kitchen alchemy. I just redid my hair last night (in the kitchen of my friends Anya, Lev, & Marian, who were very indulgent), in anticipation of the holidays, and now I’ve got five hours on a train to kill, so here’s your how-to for the month of December: RED HAIR VIA PLANT GOOP. Me, on a train, with newly-red hair. What you need: a bar of LUSH Caca Rouge henna, divided into squares; spice additives (cloves, cinnamon, cayenne); ½ cup hot black tea; ½ cup hot red zinger or rosehip tea; a tablespoon of red wine vinegar or cider vinegar; glass or plastic bowl; rubber gloves; cling wrap; four hours of time. How to do it: Get out your bar of henna. It should look like this. For hair as long as mine (mid-back, curly), you want to use two to three of those little squares. This time I used two, because I knew I didn’t need to make sure the ends of my hair were coated thoroughly, as they were already pretty red from previous henna-ings. If I was dying virgin hair, I’d use three. Short hair (above the shoulder) can probably get away with one square. Get a cutting board and a knife you don’t care much about, and chop those squares like you were mincing garlic. Dump your chopped henna in a glass or plastic bowl. DO NOT USE A METAL BOWL. There is a small chance that a metal bowl will react with the henna and produce a green dye. Green hair is not what we are going for in this tutorial. Next, add spices to your henna. The fun of henna is that it’s a plant dye, so you can use other plant dyes to accentuate colors. I tend to use cloves, cayenne powder, and cinnamon (the latter is mostly because I like how it smells) as additives, because I want scarlet-auburn shades, but you can use tumeric for golden shades, and if you are either wealthy or really lucky, saffron to get deep orange-reds. (I am going to try saffron someday, but it’s ridiculously expensive, so I haven’t yet.) Here are my additives, thrown in with the powdered henna. To release the color in the henna, you need to add a hot liquid. The recipe you get from LUSH will tell you to add water, but I’ve long since stopped using it in favor of black tea (for darker reds with brown notes) and rosehip/hibiscus tea (for SCARLET ZOMG). I split half and half between the two kinds of tea. The tea should be still quite hot (almost boiling), but also steeped sufficiently – you can always reheat it over a stove or in a microwave. Pour in about a cup of liquid, and stir with a wooden or plastic spoon until you get a smooth consistency. You’re looking for a texture about like a thick malted milkshake. Pourable glop. Add an acid. Henna can give you a brassy, orange color. To avoid this, add an acid to the mix. I use red wine vinegar or cider vinegar, but lemon juice works pretty well, too. A tablespoon is more than enough. Cover your henna mix with some cling-wrap or wax paper, and leave it for at least twelve hours. When you’re ready to apply your henna, reheat it over a double boiler, like so: Water goes in the lower pot; your bowl of henna goes over it. Stir until it gets back to that malt shake texture. Apply! Apply the henna like you’d apply any other home hairdye; make sure you get the roots at the sides and back of your head. Get a friend to check to see if you’ve missed spots. Pile all your hair on top of your head, and wrap the mass of it up in cling-wrap. Build yourself a plastic helmet. This will prevent the henna from dripping all over you, and also deepen the red shades. Wait. Wait some more. (Three hours minimum. I’ve worn henna for six before and had it turn out brilliantly.) Wash it out in the shower. It will take a LONG TIME to wash out – you’re getting a lot of particulate matter out of your hair. Use a lot of cheap conditioner to help free the henna bits. Henna is one of my favorite hair tricks – it’s much healthier for your hair than commercial chemical dyes, and the colors you get are absolutely brilliant.

I’m not sure when halva first crossed my radar — it might have been mentioned in some of the many food blogs I scan every week, in a food magazine, or on a restaurant menu, but I’ve been wondering what it is for a while. I knew it had sesame in it, and since I love sesame desserts, I put it on my to-try list. I recently was able to get my hands on some, and here’s what I thought of this Middle Eastern confection!
