Space - Sweet Honey Peach Cream Cheese Cupcakes Makes: 12 cupcakes ⏱ Total Time: ~1 hour (plus cooling) Ingredients Cupcake Batter: 1½ cups all-purpose flour 1 tsp baking powder ¼ tsp baking soda ¼ tsp salt ½ cup unsalted butter, softened ½ cup granulated sugar ¼ cup honey 2 large eggs 1½ tsp vanilla extract ½ cup sour cream or plain Greek yogurt ¾ cup diced fresh peaches (peeled if desired) Cream Cheese Filling / Swirl (optional but YES): 4 oz cream cheese, softened 2 tbsp granulated sugar 1 tsp vanilla Optional: 1 tbsp honey or peach jam for extra flavor Honey Cream Cheese Frosting: 6 oz cream cheese, softened ¼ cup unsalted butter, softened 2 cups powdered sugar 2 tbsp honey (add more for sweeter taste) ½ tsp vanilla Pinch of salt Instructions 1. Preheat & Prep Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners. 2. Mix the Batter In one bowl, whisk together flour, baking powder, baking soda, and salt. In another bowl, cream butter, sugar, and honey until light and fluffy. Beat in eggs one at a time, then vanilla. Add sour cream, mix until smooth. Gradually add dry ingredients. Fold in the diced peaches gently. 3. Optional Cream Cheese Center Mix cream cheese, sugar, vanilla, and honey/jam until smooth. Fill cupcake liners ½ full with batter, add 1 tsp cream cheese mix in the center, then top with more batter (¾ full total). 4. Bake Bake for 18–22 minutes, or until golden and toothpick comes out clean (don’t poke the cream cheese core if using). Let cool completely before frosting. 🍯 Frosting Time! Beat cream cheese and butter until creamy. Add powdered sugar, honey, vanilla, and salt. Beat until smooth and fluffy. Chill if too soft before piping
