Now this cake is a beauty. Because not only does it smell incredible and perhaps will have any stray children or pets coming out of their respective hiding places for a slice, but it also tastes divine. This is one of the harder cakes I've made. The recipe originally came to me from the gorgeous Chanel from CatsLoveCooking . She instagrammed a picture of a Czech honey cake that she was eating and I was instantly smitten by the toasted nut coating and the multiple layers sandwiched with cream. Her colleague had brought it into work and had bought it from a bakery in Manly.

On days when I want the warmth of the hearth rather than the hurly burly of the city streets I stay in and read cookery books, and this recipe comes from just the sort of book that gives most succour, Classic Home Desserts by Richard Sax. The cake itself is as richly and rewardingly sustaining: a melting, dark, flourless, chocolate base, the sort that sinks damply on cooling; the fallen centre then cloudily filled with softly whipped cream and sprinkled with cocoa powder. I love an American sheet cake — it’s a great way to feed a lot of people and, in my book, the more people get to eat cake, the better. I’ve simplified what is an already simple approach, so that both cake, and icing/frosting are made in saucepans on the stovetop: in other words, no creaming and multi-stepped process, just melting, stirring and pouring. It’s also easily transportable, making it great — in particular — for bake sales, but also to be borne in mind when you want to go armed to a friend’s house with something sweet. Add any decoration you like to this crackle-glazed, fudgy cake. This recipe's more than a recipe to us—it's a family tradition, three generations old. The frosting's a must—otherwise it's not the "true" cake! We have a timber stand with hickory trees on our farm, so getting enough nuts is easy. The problem is finding someone to crack and pick them and the "someone" usually ends up to me!
