A fail-safe sponge that's easier than it looks - almonds and yoghurt keep it moist while its fruity decoration is suitably patriotic
We had a little get together today for friends and family for the jubilee celebrations. Im not a big fan of the taste of icing so with this in mind I made a selection of red velvet cake, Victoria sponge with strawberry conserve & whipped cream, sticky toffee cupcakes, strawberry tarts, strawberry & pink champagne macarons and chocolate cake pops (made by sis). All washed down with raspberry lemonade. Everyone said it was like being at the Ritz ! :-)

A lovely, fun, amazing day. I was looking forward to it, but even so was surprised just how much I enjoyed the wedding, just how much community spirit it engendered, and just how wonderful one day could be. We started off at home, watching the beginning of the wedding coverage and putting together this union jack trifle. We then headed out of our back gate and down the track, where we joined 5 or 6 other households from the street in a mini wedding get together - the garages were opened up, televisions wired up, bunting strung up and we all had a fabulous time chatting, watching the wedding, and BBQ-ing. The children were running in and out of the different back gardens and the Pimms was free flowing. We took a short walk around the corner to a wonderful and huge street party and then came back to our alley do and did some more drinking, chatting and cheese eating (red, white & blue all represented on the cheeseboard) before the children needed carrying home to bed. Nick then headed back out to drink the evening away while I watched hours of highlights of the wedding, catching all the details I missed earlier. A day to feel real pride in our monarchy, our country, our neighbourhood and our children (who were pretty well behaved). Almost a pity it only happens once in a generation. Congratulations Will & Kate - hope you had as fabulous a day as the rest of us, certainly looked like it.
With sweet raspberries, pops of fresh mint and zingy lemon curd, this dessert is fit for royalty. Making your own meringue is easier than you might think, and it’s totally worth it in my eyes – you’ll end up with a beautifully crisp exterior, and the most outrageously chewy centre.
