Cumberland Falls SRP Corbin, KY Cumberland Falls is the highest volume waterfall in the south and second highest east of the Mississippi River, with Niagara being the highest. But that's not all. It is one of two waterfalls in the world that have predictable moonbows, and the only one in the western hemisphere. The other one is Victoria Falls in Africa. All you need are clear skies on two nights either side of the full moon night, or the full moon night itself. It gets very crowded there on moonbow nights, so you gotta get where you can to get a photo. Luckily in this photo, I caught a little swirl action in the lower right of the photo.

If you missed part 1 of our houseboat adventure click HERE. I love, love, love the beach, but as I mentioned yesterday our family also loves the lake life. When I saw this sign at one of the marinas I nodded my head in agreement. The next few days we fell into what would be our daily schedule for the week. Wake up and see the amazing views of the lake. Eat breakfast, put on swimsuits, and either swim, enjoy the sunshine or float in the water. While the adults relaxed the kids jumped off the top of the house boat. Over and over and over. Next up would involve a little wake-boarding or tubing and everyone would take turns. My little two are still learning to wake-board so they like to ride with the Mr. This girl is an old pro by now though and loves to ride every chance she gets! By this time everyone is usually hungry so it's back to the houseboat for lunch. As you can see, most of the week it felt like we were the only ones there. We'd spend the rest of the afternoon doing pretty much more of the same. Lost of swimming, fishing, jumping, paddle boarding and relaxing. We also did some turtle spotting. The kids were convinced we saw this same turtle everywhere we went. That was until we went to the marina one day to get more ice and saw this: The most turtles in one place that I have ever seen in my life! They were eating whatever people would throw down for them including crackers or the "fish food" that you could buy for $0.25. We usually stayed in one place for two nights, but if we did decide to move locations on the lake this is how we traveled. We had planned to go out to eat a lot more than we did, but with a grill on the houseboat we just ended up cooking most nights which was nice after a long day on the water. Everyone was just fine with that because it meant we could just be casual and the girls loved it because they wanted to wear their Simply Southern t-shirts every chance they got. My sweet friend, K, got them for each of the girls! We did decide to get all dolled up and go to dinner one night. It was fun to change things up a bit! We ate at the Jamestown Marina and the food was really delicious. The views of the sunset on the way back to the houseboat were breathtaking! I'll share about the rest of our trip tomorrow so be sure to check back then! I'll also be sharing tips, tricks and things we learned along the way for anyone else interested in a trip like this! People often talk about how moving the shore is—a place that relaxes, awakens, and recharges. Then there are those whom, well, it literally moves: "Our family loved going to the beach so much that we spontaneously picked up and moved our family of six there! No job, no plan, no idea whether we'd truly like it or not.... We just did it," says Mike Ragsdale, formerly of Birmingham, AL, now of Santa Rosa Beach, FL. "That was almost four years ago, and we all agree it was the best thing we ever did as a family." What is it about ocean shorelines that has such power? They touch every sense: the redolence of fresh sea breeze, the sand underfoot, the sparkling sunsets, and the white noise of crashing waves. Whether you're reclining on windswept sands or trekking across dizzying bluffs, the ebb and flow of the water is hypnotic, and its sheer expanse grounding. Something as vast as the ocean just puts all of life's little worries into perspective. "For me, it's the freedom that comes with a coastal visit that's particularly appealing," says Jeanna Zelin, founder of Retreats by the Sea, which organizes luxury wellness getaways to such beachside destinations as Portland, ME; Santa Barbara, CA; and Chatham, MA. "You're on vacation, so there's no work to be done. Plus, the textures and scents and sounds of the surf carry your mind away—you turn off your left brain and just start feeling." Zelin's lifelong affinity for the beach stems from childhood summers on North Carolina's Outer Banks, where wild ponies roam on certain shores. Those on Shackleford Banks have a special story, says Zelin: "The origin of the Shackleford horses, according to my relatives in North Carolina, is a mystery—with the most common legend telling the story of Spanish mustangs swimming ashore from a wrecked ship." Camping next to meandering horses, especially ones with such a backstory, makes for the most romantic and rustic of beach scenes. Treasures can be found along all of the United States' coasts, 95 thousand miles of eastern, western, northern, and southern shoreline that exemplify the diversity our country has to offer. Rent a convertible, crank up some Beach Boys, and cruise down the glittery glam beaches that line California's Pacific Coast Highway. Or, for a more isolated drive, try winding in and out of the majestic fjords draping southeast Alaska's forested border, a haven for bald eagles and humpback whales. So whether you crave a bracing hike along blustery seaside cliffs or a relaxed afternoon under the fiery sun, the U.S. has a shore to match your every mood—and views that will blow you away.
