Lernert & Sander responded with this somewhat miraculous photo of 98 unprocessed foods cut into extremely precise 2.5cm cubes aligned on a staggered grid. Looking at the shot it seems practically impossible, but the studio confirms it is indeed the real thing. Sastojci 1 l. mlečne slatke pavlake sa oko 30 % mlečne masti 5 dcl. mleka 150 g. šećera 1 vanilin šećer 150 g. bele čokolade 15 g. želatina u prahu + 1 dcl. vode za rastvoriti želatin 300 g. jagoda 3 kašike šećera oko 100 g. petit keksa malo namočenog u mleku Priprema Prvo pripremiti smese koje treba da se ohlade pre nego što nastavimo. Želatin staviti u vodu i ostaviti nekoliko minuta da nabubri. Mleko, šećer i vanilin šećer prokuvati pa skloniti sa vatre. Želatin zagrejati desetak sekundi u mikrotalasnoj, sipati u toplo mleko i izmešati. Ostaviti da se ohladi i stegne do gustine meda, znači kada želatin počinje da deluje. Jagode na grubo izmiksitai u blenderu, dodati šećer i kuvati 2-3 minuta. Procediti kroz cediljku za supu, nemojte gnječiti i mešati da sav sok ode, neka ostane ređa kaša, oko 4 vrhom pune kašike. Ostaviti da se ohladi do sobne temperature. U dublju posudu dimenzija oko 20x30 staviti jedan red petit keksa. Kada su se obe prethodne smese ohladile na sobnoj temperaturi i mleko lagano zgusnulo, mutimo slatku pavlaku sobne temeparature. Slatku pavlaku umutiti kao šlag, dodati zgusnuto mleko i izmiksati. Odvojiti 1/3 i izmešati sa jagodama. Sipati preko keksa i ostaviti na deset minuta u zamrzivač. U međuvremenu u mikrotalasnoj istopiti čokoladu. Ostaviti dva-tri minuta da se prohladi, sipati u ostatak belog krema i dobro izmiksati. Krem sipati preko krema od jagoda i sve zajedno ostaviti nekoliko sati u frižider da se lepo stegne i da se sjedine ukusi. Dekorisati šlagom, jagodama, ja sam stavila žele od jagoda. NAPOMENA Nekoliko puta sam napisala da sastojci treba da budu sobne temperature. To je zbog sjedinjavanja sa belom čokoladom. Ako je velika razlika u temperaturi, ako bi slatka pavlaka i ostali sastojci bili jako hladni i tek izvađeni iz frižidera bela čokolada bi mogla odmah da se zgruša i pretvori u sitne grudvice i ne bi se dobio fin i kremast fil.

Summer screams for large ice cubes and cold beverages — this time of year Tim and I love making herb-infused ice cubes to incorporate into our seasonal cocktails. We packed leaves of fresh mint from our Farm Table delivery box into these over-sized silicone ice trays we picked up from The Meat Hook during our last trip to Brooklyn. These trays are pretty easy to find around — here's a link to them in our Amazon shop to get more details. They make those perfectly large sized cubes that go in a single tumbler and give off that old fashioned cocktail feel. After a few hours in the freezer, we were all set: Once removed from the trays, the mint-infused cubes of ice are like little works of art, encapsulating and preserving a sort of timely little treasure. It's fun to see how the water froze around each mint leaf and try to spot the little details on each one. It's definitely not brain science, but these kinds of ice cubes always feel a little magical somehow. We've been incorporating these mint infused ice cubes into what we like to call "inside out mojitos" over the past few days throughout the heat wave to stay cool and refreshed. We love how the icy cold hints of mint unravel into the drink with each sip we take as the cubes begin to dissolve and disperse. Stay tuned for Tim's "inside out mojito" recipe coming up next!
