Cooking With The Vu Fam - Lemon Garlic Butter Chicken Bites with Savory Parmesan Spaghetti Ingredients: 1 lb boneless chicken breast, cut into bite-sized pieces 2 tbsp olive oil 3 tbsp unsalted butter, divided 3 garlic cloves, minced Juice of 1 lemon (about 2 tbsp) 1 tsp lemon zest 1 tsp Italian seasoning Salt and pepper to taste 12 oz spaghetti ¾ cup grated Parmesan ½ cup pasta water (reserved) Optional: chopped parsley for garnish Instructions: Cook spaghetti in salted boiling water per package directions. Drain, reserving ½ cup pasta water, and set aside. Season chicken with salt, pepper, and Italian seasoning. Heat olive oil and 1 tbsp butter in a large skillet over medium-high heat. Add chicken and cook 4-5 min, stirring occasionally, until golden and cooked through (165°F internal temp). Lower heat to medium. Add remaining 2 tbsp butter, garlic, lemon juice, and lemon zest to the skillet. Stir for 1-2 min until fragrant, coating the chicken. Remove chicken and set aside. In the same skillet, toss cooked spaghetti with Parmesan and reserved pasta water, stirring until a creamy sauce forms (1-2 min). Season with salt and pepper. Top spaghetti with chicken bites, drizzling any remaining lemon garlic butter from the skillet. Garnish with parsley if desired. Serve hot. Like and share if you enjoyed this recipe!
