Rainy season, one of the best seasons to have hot and spicy food. I love having sizzlers in this weather but when your home and you wanna have something hot and spicy which can be made in a jiffy are noodles. I have made these Hot and Spicy noodles which can be eaten without gravy as they are mildly saucy and rich in flavor. Very simple to make. HOT & SPICY NOODLES Serves - 4 Time - 15-20 mins Ingredients 1 packet of Hakka noodles 1 Carrot slit lengthwise 8-10 French beans cut diagonal 1 Red bell pepper cut lengthwise 1 Yellow bell pepper cut lengthwise 1 Green capsicum cut lengthwise 4 Green onions sliced - also use the long stalks chopped finely Salt to taste Oil 1 tsp Cayenne pepper grounded (you can use black pepper or white pepper too) 1 tsp Oregano 1 tsp Red Chilli flakes 1 tbsp Tomato ketchup 2 tsp Red chilli sauce 2 tsp Soy sauce Method Boil Hakka noodles. To boil noodles take a huge pan, add 5-6 cups of water, add salt to taste and 1 tbsp oil, when water reaches boiling point add noodles and boil them for 3-4 minutes till ready. Make sure they don't get over cooked. Strain the noodles, if using immediately then just strain and keep. If your going to use later then run it under cold water and then toss some oil in it so that they don't stick. In a pan add oil, then add the vegetables, saute, add salt, pepper and all seasonings, let it cook for 3-4 minutes, add all the three sauces and mix well, then add and fold in the noodles slowly so that they get mixed nicely. Cook for 2 minutes, add green onion stalks and cook for a minute. Hot and Spicy noodles are ready!
