I’m a sucker for a good chocolate chip cookie. I’ve also become a bit of a cookie “snob” over the years and am extremely picky about what I like. St. George’s Hall Cake When I was sorting through Grandma’s recipes, I was intrigued to find she had an old recipe in her collection for a St George’s Hall Cake so this is a perfect cake to celebrate St George’s Day on 23 April. It’s been a popular cake at my talks and events. It’s also a very easy cake to bake and fits any shape of tin, square, round and loaf. St. George’s Hall Cake ¼lb/110g butter ¼lb/110g sugar 2 eggs ½lb/225g plain flour 1 tsp baking powder A little salt ¼lb/110g currants 2oz/50g candid peel ½ cupful milk Work the butter to a cream. Add the sugar and beat well together. Add the eggs (well beaten), flour, baking powder, salt, currants, candid peel and milk. Beat well for 5 minutes. Bake in a warm oven for 1¼ - 1½ hours. (325F, Mark 3, 170C) So where is the link to St George’s Hall? Being a collector of old cookery books, I found the same recipe in ‘The Glasgow School of Cookery Book’ 1910. The Glasgow School of Cookery was established in 1875. Initially, it hoped to educate young working-class women in culinary skills and later promoted culinary education within board schools. Alongside similar schools from Edinburgh, Liverpool and Leeds, it formed an alliance to institute uniform standards and common examinations for teachers of cookery. The link to Liverpool and St George’s Hall, a major listed building on St George’s Place which was opened in 1854,, becomes evident as a version of the recipe was featured in the Liverpool School of Cookery 1911. There are numerous myths and legends around the story of St George, the patron of England. St George's Day is celebrated on 23 April in a tradition established during Tudor times. It’s also the feast day of several other countries and cities where he is the patron saint, including regions of Portugal and Spain. St George is thought to have been born in Cappodocia (modern day Turkey) and to have died in the Roman province of Palestine in AD 303. We have another celebration on 23 April as this day is widely recognised as William Shakespeare's traditional date of birth and commemorated every year in Stratford on Avon and throughout the world. Get ready to bake St George's Hall Cake and celebrate!

As most of you know, I am on the "Masterchef" journey. This recipe was demonstrated by George Calombaris's mother. I have changed things slightly because I didn't have all the ingredients, it was yummy for a warm winter evening! Vegetables 3 eggplants, sliced 5mm thick (if you don't like eggplant, try any other combination of vegetables, like zucchini.) George's mother left stripes of skin on her eggplants to make sure the people eating knew what they were, but we found the skin a bit tough so would leave it off next time. If you use eggplant, remember to slice, sprinkle liberally with salt, leave to sweat for 1/2 hour, then pat dry. 4 large potatoes, sliced 5mm thick Tomato Sauce 500g mince 1 onion, finely diced 2 cloves garlic, finely diced 1 tablespoon dried oregano 1 tablespoon thyme, chopped 1 tablespoon rosemary, chopped 2 cinnamon quills (we used a sprinkle of ground) 250g crushed tomatoes 2 tablespoons tomato paste ½ cups water Olive oil, for frying Bechamel 60g butter 60g plain flour 600ml milk, warmed 100g keflagraviera (we used parmasen) cheese, grated 1 egg, beaten Extra cheese, grated 1. Preheat oven to 180⁰C. 2. Heat oil in a large frying pan or saucepan, add mince and cook until browned and meat breaks up. Add onion and sauté until softened. Add garlic, oregano, lemon thyme, rosemary and cinnamon and allow to cook for 3-5 minutes, stirring occasionally. 3. Add crushed tomatoes, tomato paste and water, bring to the boil, reduce heat to low and simmer for ½ hour. Season with salt and pepper to taste. 4. Pour oil into a frying pan approximately 1cm deep, place over a high heat and shallow fry potatoes for 3-4 minutes on each side or until tender. Drain on paper towel. 5. Pat dry eggplant (or vegetable) and pan fry on each side until golden yet still firm. Drain on paper towel. 6. For béchamel, melt butter in a heavy based saucepan. Add flour, stir over a low heat for 2 minutes. 7. Slowly add warm milk, stirring continuously until thick. Add extra milk if sauce is to thick. 8. Whisk in cheese and an egg yolk, season to taste. 9.. To assemble, oil casserole dish and layer as follows. Meat sauce, potato, sauce, potato, sauce, eggplant, sauce, potato, eggplant and remaining sauce. Cover with béchamel and grate extra cheese over. 10. Bake for 45 minutes until browned and béchamel has set. Serve.

This delicious onion soup is a modern adaptation from an 18th century original, obtained from Mt. Vernon’s (George Washington’s estate) collection of recipes. According to it’s website, the recipe was created by Nancy Crump, a culinary historian, for the book Dining with the Washington’s. We’ve included our own revisions to the recipe below. President’s Day isn’t typically known for it’s food fanfare, like so many other national holidays are. So, you might not think to plan a holiday-specific menu for the long weekend. After digging through some of George Washington and Abraham Lincoln’s favorite foods, you might want to change your outlook on your President’s Day eats. Those men, whose day we celebrate, ate pretty well. The best part about it, some of those dishes that likely took hours to make are now pretty simple with their modern day revisions. Like this one. George Washington’s favorite onion soup is reminiscent of a slightly thicker French Onion Soup and takes less than 30 minutes to whip together. I cut the recipe in half when I made it, but after my first bowl, I wished I’d made the whole thing. It was delicious.
