Italian Step by Step Saffron Risotto recipe In the North of Italy saffron risotto is definitely the most popular and preferred by young people and gourmets, as easy to prepare, tasty, light and colorful. This yellow rice, we find different versions, and historic recipes; prepared by chefs from all over the world, it is quite common to find saffron risotto accompanied by fungi, usually mushrooms, sausages or why not, shrimp and other seafood. Ingredients Butter 125 gr. Broth 1 liters onions 1 150 gr grated Grana Padano Zafferano1 pinch of pistils Zafferano1 sachet Risoarborio 350 gr 200 ml white wine (Italian Best Taste ? Finally found it on Amazon ) Preparation step by step To prepare the risotto with saffron begin by finely chopping the onion (1), then melt over low heat, 80 grams of butter (2) taking care not to fry, then add the finely chopped onion and let it brown, stirring constantly with a spoon wood (3-4). Add the rice (5) and toast making him absorb the butter (6), then increase the heat and pour the rice first with wine (7), let it evaporate, and then with 2 ladles of hot broth (8); always mixed, and when this will be almost absorbed, aggiungetene another 2 ladles (9). This operation must be repeated until the complete cooking. In the last 5 minutes of cooking, dissolve the saffron in a little broth (10) and pour in the rice (11), letting it mix well (12). Before serving, it is better to let the saffron risotto rest for a few moments (15), so that it can insaporirsi further. Sprinkle the saffron risotto to decorate serving dishes. Conservation Keep the saffron risotto, closed in an airtight container and place in the refrigerator for two days at most.
