I dread writing this post. Why? It was the last competition of 2014 for Three Dogs BBQ. The long six to seven month wait until our next time on the BBQ trail. But, before we close the book on 2014, lets have a look at Three Dogs BBQ's last road trip of the year. This time, we loaded up the trailer and headed to Harrisburg, PA for the Keystone Classic BBQ State Championship. This is one of our favorite competitions all year long. Why? Farm show food and milkshakes and plenty of horses. The competition is held in conjunction with the states annual livestock show, billed as the largest east of the Mississippi. They have show horses that get all dressed up and pull wagons. Or, they have big Belgian Draft horses that take part in the horse powered version of a tractor pull. I named this one Pouty. Some can even be caught dreaming of BBQ at 5 am. Amazing how they can sleep standing up. Don't you wish you could do that? So, lets quit horsing around and review the weekend. Shall we? First, we felt like we were back in New York. Why? Rain. Lots. Twelve hours worth. Enough to create Lake Three Dogs BBQ, right next to our site. But, the rain moved and the sun came out from behind the clouds in time for turn ins at noon. Here were our scores. And here were the boxes. Our chicken box came through as always. This entry scored us a 170.2628, good enough for ninth place out of 53 teams. Our rib box fell into the tasted better than it looked category. This box scored us a 162.2856, good for 22nd place. In our opinion, it was our best tasting, most tender rib effort of the year. Our pork box was a milestone for Three Dogs BBQ. This was the first box that Hope ever built. 888899 in appearance proves she did a good job. We scored 165.7028, good enough for 15th place. Finally, our brisket box. Not out best effort of the year and the scores reflected our feelings. 151.3944 was the score and a 39th place. Our brisket was slightly over done. A comment card or two would have been nice, but the scores were not low enough to warrant comments. This will be a focal point for practice over the year. Overall, our total score was 649.6456, 20th out of 53. This was our second best point total of the year. So, ending the year on a high note, check! We would like to thank the contest organizers and the KCBS reps for running a contest without any problems. Congrats go out to our Grand Champion Pig Pen BBQ and our Reserve Grand Champion Big Ugly's BBQ. Big Ugly's also won the MABA Cup for 2014, so an extra shout out as well. We would also like to thank those who have supported and helped us over the years and in 2014 as well. It wouldn't be fun and we couldn't do it without you. So, before we put an "end" to the 2014 season, just a reminder to everyone to check back for more recipes and BBQ adventures in the off season. Any suggestions or ideas for recipes are greatly appreciated. Thanks for stopping by, Bill
Wow, what a crazy month of competition BBQ! We competed in three cook-offs (two KCBS and one SBN). We had some highs, 10th in chicken out of 94 teams in Greenwood, SC; and some lows with not so good pork scores at all three events. Cooking all of these contests back-to-back and watching Amy spend hours preparing the turn-in boxes; I thought this would be a great time to divulge in more detail about what a turn-in box is and how to make them. For the SBN (Southern BBQ Network) event, they do not want any type of garnish in

Last weekend the Three Dogs BBQ road show headed down to Annapolis, MD for our first competition of the year at the Naptown BarBAYq Contest and Festival. The festival is held at the Anne Arundle County Fairgrounds and features the BBQ competition, food vendors, bands, and a judging class on Sunday. In all 64 teams were competing for awards and bragging rights for the year. The contest was also a opportunity for us to catch up with old friends and meet new ones. Here are some pictures from the weekend. The highlight of the weekend was being able to sign the banner honoring our late friend, Bill Allen, who passed away earlier this year at a BBQ competition. If you are competing in the MABA region this year, look for this banner at the Smokin Foolz cook site and stop by to sign. Smokin Foolz will present the banner to Kathi Allen, Bill's wife, at the end of the season. As for our cook, we did not get off to the start that we wanted to this season, ending up 47th out of 64 teams. Here were the pictures of our turn in boxes. Our timing was off from the start, the skin pulled back on the legs, the ribs were slightly over done, the brisket was slightly under done. Not a good weekend at all. But, we'll learn from the weekend and move forward. We can only go up from here. Thanks to Doreen Vavrek (a Pittsburgh girl!) for putting together another great competition. Congrats also go out to 3Eyz BBQ on their back to back Grand Championships at Naptown and to Chix, Swine & Bovine BBQ, our Reserve Grand Champion. We hit the road next in two weeks at the Salt City BBQ Festival in Syracuse, NY. If you are in the area, stop on by and say hi. Thanks for stopping by, Bill

The Three Dogs BBQ road show packed up and headed to New Paltz, NY this past weekend to compete in the Hudson Valley Ribfest for the weekend. So, after picking up some provisions at Dave's Country Meats... ... and some other odds and ends, we hit the road for the long drive out east. We were the first team on site Friday, so it was easy to back into our site. Was this a good omen? The smoke was rolling on Sunday morning... And we had a rather large dancing chicken next to us as well. How did we do? Well, the scores tell the story. In the "it tasted better than it looked" category was our chicken box. I've never had so may legs with split skin. These were our best looking six legs. But, the taste and tenderness was good enough to net us a 9th place out of 60 teams. A good start to the day. Next up, our ribs. We switched to baby backs for this competition and the change paid off for us. We garnered our best KCBS score of the year, good enough for a 12th place. Then, the pork box... We should not have put the money muscle in the box. It was underdone. But, my heart won out over my brain and we paid for the decision. We took 45th place with this box. Lesson learned. Finally, our brisket. After a bit of struggling this year, we changed our cooking method this time around and it helped for sure. This box came in 7th. Add it all up and we came in 17th place overall out of 60 teams. Our pork definitely kept us out of the top ten and maybe even the top five. It was just not to be. What can you do? Hudson Valley was our first competition in 2011. This competition holds a special place in our heart since it was our first. Also, Rolf and Stephanie do a wonderful job organizing this competition. Keep up the good job guys. Finally, congrats to all who walked. Team Eatapedia, nice to see you end your mini slump and Shortsville Smokers on their top 10 overall. Also, big congrats to our Grand Champion Ack-Que and Reserve Grand Champion Blazin Butts BBQ. We are already planning our trip for next year. See you then. Thanks for stopping by, Bill

This past weekend (March 1-4, 2018) Kansas City’s Folly Theater was teeming with tutus. It was the first time Youth America Grand Prix (YAGP) had held a Regional Semi-Final in Kansas City. From Meat Church BBQ: This sweet heat pork and poultry rub is very versatile. It starts out sweet and then has a subtle back-end kick much in the same fashion as our insanely popular Holy Voodoo. It is fantastic on ribs, pulled pork, chicken, turkey, seafood, smoked cream cheese & popcorn. The rub is sweet, but not overly sweet. In fact, it is less sugary than 6 of our current seasonings. Texas Sugar is just a catchy name that we always wanted to use! The history on the seasoning comes from Matt's competition BBQ days. Many folks have "gotten paid" at BBQ competitions using this rub on their ribs, pork and chicken entries at KCBS and IBCA competitions. Gluten Free. No MSG.
It's Back! Developed by a true BBQ Championship team-Happy Holla's Ed and Mureil Roith used this blend as two time Team of the Year for the KCBS. Excellent on pork, beef, poultry and fish!

Stan Bunger, the massively overrated KCBS veteran morning anchor, interviewed Mayor London Breed on Wednesday (today) It was an audio photo op for the mayor; they spoke about the partial reopening of SF restaurants --Breed was doing her thing and Bungerr was a willing co-opt in the mayor's opportunity for a mostly fluff-filled five or so minutes on the telephone. But he,y screw creativity! Bunger had a real opportunity to do something original. It would have been spontaneous and it would have made for something potentially interesting and off the beaten path. Something unique, maybe like... ' Ask her highness about last night's debate. Yeah, that thing. The thing that everyone is talking about whether at home or work or at home working. After all, the mayor is head of a major city; the mayor has endorsed Joe Biden; the may mayor, I don't know, probably has an opinion or two, call me crazy but I bet she would have talked a second or two or three. INSTEAD, Bunger, who talks extemporaneously ad nauseum about the weather and pontificates as if he were Willard Scott, stuck to the notes and willfully participated in Mayor Breed's free PR app, another ho-hum few minutes of basic standard political faire and UNBELIEVABLY, Blunder, eh, Bunger had a chance to make some real news and catch Breed for something different, something outside the box and he FLUBBED, of course he did.
