This one-pot recipe Spanish Chicken and Potatoes is full of flavor and vibrant color and is perfect served with a big piece of crusty white bread or over a steaming hot pile of rice. The recipe is one inspired from a tomato "salsa" my sweet host mother, Fatima, always made for me when I lived in Sevilla, Spain.
Recipe video above. The best chicken and rice recipe in the world!! This is not an authentic Greek dish (as far as I know!) but it is made using classic Greek ingredients. The beauty of this is that it is all made in one pot / pan. Cooking the rice with the chicken on top adds extra flavour to the rice because the chicken juices get soaked up by the rice. MARINATING TIME: 20 minutes to overnight. {Recipe video above} SCALE RECIPE using servings slider - hover mouse over Servings.

I learned to make this chicken curry while working at Fork in Philadelphia many years ago, now. The chef, Thien Ngo, prepared it somewhat differently — he browned the meat first in one pot; browned a ton of vegetables (carrots, parsnips, onions) in another pan; additionally, he deep-fried potatoes; and he cooked everything stove top. I've converted this to a one-pan number, and in place of the carrots, parsnips, and potatoes, I stir in a heap of spinach at the end. A few notes: If your chicken thighs or drumsticks are particularly fatty, trim the excess fat. This will prevent your sauce from being too fatty in the end. Thai red curry paste. Maesri is the brand I buy at the Asian market. You can find it online, too. I use half a tin for this recipe (which is about 3 tablespoons), which makes it quite spicy but not outrageous. If you are sensitive to heat, start with a tablespoon and adjust the sauce with more at the end.

Kokinisto is a popular Greek cooking method. Kokino translates to the color red hence, kokinisto is a red sauce made with tomatoes, onions, garlic, and herbs. You can cook anything in it to create a spectacular meal. Even simple vegetables cooked or roasted in this sauce take them to the next level. I love this dish in particular because all of the ingredients are literally dumped in a baking tray, mixed, and baked until everything is tender. All of the work is done in the oven which makes this perfect for a busy weeknight. I added Harissa, a paste made with roasted red peppers, garlic, and spices. If you cannot find it, go ahead and substitute some jarred roasted red peppers. Puree them with the tomatoes and you will love the hint of sweet and smoky flavor that they will add to this dish.
