Έχω ιδιαίτερη αδυναμία στα χορταρικά, γι΄ αυτό και τα φτιάχνω συχνά, είτε σαν βραστή σαλάτα, είτε σε πίτες και πιτάκια, είτε με διάφορους άλλους τρόπους. Ένας από αυτούς είναι τα τσιγαριαστά χόρτα, συνταγή νόστιμη και αρωματική. Πάμε να σας πω πως τα μαγειρεύω! Τα υλικά μας: 1 κιλό γλυκά χόρτα (ήμερα ραδίκια, βλίτα) 250 γρ. σέσκουλα 1/2 ματσάκι μυρώνι ή 5 κλωνάρια άνηθο 1 μεγάλο ξερό κρεμμύδι 2 κρεμμυδάκια φρέσκα 1 μεγάλη σκελίδα σκόρδο, ψιλοκομμένη, χωρίς το φύτρο 1 ντομάτα μεγάλη, ξεφλουδισμένη και χωρίς σπόρους 1 κουταλιά πελτέ ντομάτας του εμπορίου ή 2 κουταλιές σπιτικό πελτέ 1/2 φλιτζάνι τσαγιού, μετρίου μεγέθους, λάδι ελιάς από 1/4 κουταλάκι, δυόσμο, ρίγανη, μαντζουράνα 1 κουταλιά ξύδι 1 πρέζα ζάχαρη αλάτι και φρεσκοτριμμένο πιπέρι 1 φλιτζάνι τσαγιού, μετρίου μεγέθους, νερό Τι κάνουμε: Καθαρίζουμε τα ήμερα ραδίκια ή τα βλίτα, από τα κίτρινα φύλλα και τα σκληρά κοτσάνια. Τα ρίχνουμε σε μεγάλη κατσαρόλα με νερό που βράζει. Αφήνουμε να βράσουν και να μαλακώσουν, προσοχή όμως, όχι να λιώσουν. Τρίβουμε την καθαρισμένη ντομάτα στον χονδρό τρίφτη. Καθαρίζουμε και κόβουμε το ξερό κρεμμύδι σε φέτες. Καθαρίζουμε και κόβουμε σε ροδέλες τα φρέσκα κρεμμυδάκια. Κρατάμε και όσο πράσινο μέρος τους είναι μαλακό και το κόβουμε και αυτό σε κομματάκια. Ψιλοκόβουμε το μυρώνι ή τον άνηθο. Σε μεγάλο τηγάνι βάζουμε το ελαιόλαδο να ζεσταθεί καλά και ρίχνουμε το ξερό κρεμμύδι πρώτα να σωταριστεί λίγο και μετά προσθέτουμε και τα φρέσκα κρεμμυδάκια και το σκόρδο ψιλοκομμένο. Αν τα βάλουμε μαζί, ώσπου να σωταριστεί καλά το κρεμμύδι, τα κρεμμυδάκια θα καούν, γιατί χρειάζονται λιγότερο χρόνο για να γίνουν. Όταν σωταριστούν καλά τα κρεμμύδια, προσθέτουμε την τριμμένη ντομάτα, τον πελτέ το ψιλοκομμένο μυρώνι ή τον άνηθο, τα μυριστικά, 1 πρέζα ζάχαρη, το ξύδι, και το νερό. Χαμηλώνουμε την φωτιά να σιγοβράσουν, να απορροφηθούν τα πολλά υγρά και να μαλακώσουν. Συγχρόνως τα χόρτα θα έχουν γίνει και σβήνουμε τη φωτιά στην οποία έβραζαν. Με τρυπητή κουτάλα, τα παίρνουμε από την κατσαρόλα και τα βάζουμε στο τηγάνι που σιγοβράζει, μαζί με τα κρεμμύδια, τη ντομάτα και τα μυρωδικά. Δεν στραγγίζουμε τα χόρτα πολύ, να έχουν λίγο νεράκι. Προσθέτουμε αλάτι και πιπέρι και ανακατεύουμε προσεκτικά, για να μην λιώσουν τα χόρτα. Σιγοβράζουμε να εξατμιστούν τα πολλά υγρά. Δεν αφήνουμε το φαγητό στεγνό, πρέπει να έχει τη σάλτσα του. Ραντίζουμε με λίγο φρέσκο λάδι ακόμα. Σερβίρεται ζεστό με τυρί φέτα, ή παρέα με άλλα εδέσματα, όπως κρέας ή ψάρι, αντί για σαλάτα. Παρατηρήσεις: Δεν βάζουμε μαζί και μυρώνι και άνηθο, γιατί τα αρώματά τους μοιάζουν πολύ και μπορεί να μην μας αρέσει το γευστικό αποτέλεσμα. Επιλέγουμε ή το ένα ή το άλλο. Ο σπιτικός πελτές ντομάτας, συνήθως, δεν έχει την ίδια πυκνότητα με του εμπορίου, όπως φαίνεται και στη φωτογραφία. Γι΄ αυτό η ποσότητα του στη δοσολογία είναι, διπλάσια. Τα χόρτα και τα μυρωδικά, είναι δικής μου παραγωγής. Επειδή έφτιαξα μπόλικα τσιγαριαστά, περίσσεψαν και για την επόμενη μέρα. Σκέφτηκα λοιπόν να ανακυκλώσω το φαγάκι μας ως εξής: Τα έβαλα σε ένα τηγανάκι, με λίγο νερό να μην κολλήσουν, έκανα 2 γουβίτσες και έριξα 2 αυγά. Έτριψα και λίγη φέτα γύρω-γύρω, το σκέπασα με ένα πιάτο και άφησα το φαγητό να σιγοβράσει για 15΄. Έγινε ένα ωραιότατο φαγάκι και δεν πετάξαμε και τίποτα! Καλή μας όρεξη! Ειρήνη Ε.

Kennt ihr Stielmus bzw. Rübstiel? Ich hatte noch nie davon gehört, bis ich einen Bund Stielmus in meiner Ökokiste fand. Das liebe ich so an meiner Ökokiste, immer wieder für eine Überraschung gut! Stielmus sind die Blätter von Speiserüben und Kohlgemüse. Stielmus ist vor allem im Rheinland und Westfalen bekannt, früher aß man es hauptsächlich im Winter, in Salz eingelegt und vergoren, ähnlich wie Sauerkraut. Heute ist es eher ein Frühjahrsgemüse und wird frisch geerntet verzehrt.Stielmus schmeckt fein, leicht säuerlich und frisch. (Quellen: 1, 2) Das erste Mal gab es bei mir Stielmus kurz angebraten, mit etwas Sahne verfeinert zu Pasta, das zweite Mal mit Kartoffelpüree vermischt. Beide Varianten fand ich sehr lecker, die Kartoffelvariante aber ein kleines bisschen besser, deswegen gibt es für die ein Rezept. Falls ihr mal irgendwo Stielmus sehr, probiert es! Dazu gab es bei mir eine Wheaty Thüringer. Ach, und habt ihr vielleicht tolle Stielmus-Rezepte? Der nächste Bund kommt bestimmt. ;-) Rezept für eine große Portion: 1 Zwiebel 1 Knoblauchzehe 1 Bund Stielmus 2-3 Kartoffeln ca. 50ml Gemüsefond ca. 100ml (vegane) Buttermilch Salz, Pfeffer, Muskat Bratöl Zwiebel und Knoblauch fein hacken. Stielmus in ca. 3-4cm lange Stängel schneiden. Waschen und in einem Sieb abtropfen lassen. Kartoffeln schälen, würfeln, in einem Topf in etwas Salzwasser bissfest garen. In einer Pfanne Öl erhitzen. Zwiebel darin anschwitzen, bis sie glasig werden. Knoblauch dazu geben, ca. eine Minute mitbraten, dann den Stielmus dazu geben. Mit Gemüsefond ablöschen, ca. 10 Minuten köcheln lassen, bis das Gemüse bissfest und der Fond verdampft ist. In der Zwischenzeit die vegane Buttermilch herstellen. Dazu 100ml Sojamilch mit 10ml Zitronensaft (oder Apfelessig) vermischen. Ca. 5 Minuten stehen lassen, bis die Sojamilch ausflockt und dick wird. Achtung, das funktioniert nicht mit anderer pflanzlicher Milch! Kartoffeln abgießen, zurück in den Topf geben. Mit einem Kartoffelstampfer zerstampfen. Buttermilch dazu geben, bis die Kartoffelmasse weich und cremig ist, mit dem Stielmus vermischen und mit Salz, Pfeffer und Muskat abschmecken.
