Utóbbi rögtön megy is a hűtőbe, erre később lesz szükség. A 6 tojássárgáját 75 g cukorral nagyon krémesre, habosra keverjük kézi mixerrel, a vége felé hozzáadjuk a citrom lereszelt héját és kifacsart levét. A zselatint vízbe áztatjuk. Kis lábasban 3–4 evőkanálnyi vizet forralunk, a lángot elzárva alatta egyesével feloldjuk benne a megpuhult zselatint. A citromos krémből kb. 3 evőkanálnyit a zselatinhoz keverünk, alaposan eldolgozzuk, majd a citromos krémhez öntjük, óvatosan, finoman elkeverjük, és a krémet hűtőbe tesszük. A 2 tojásfehérjéből 1 csipet sóval kemény habot verünk, ugyanígy járunk el a tejszínnel is, amihez a vége felé hozzáadjuk a vaníliás cukrot. A két habot finoman a hűtőből kivett, dermedő citromos krémbe vegyítjük. A krémet 6 pohárba osztjuk, és néhány órára hűtőbe rakjuk. Végül a félretett 4 tojásfehérjéből kemény habot verünk, amikor már majdnem készen van, hozzáadjuk a maradék cukrot. Sima csövű habzsákból kis csúcsos sipkákat nyomunk a citromkrémre, majd karamellizáló pisztollyal kissé megpörköljük a cukros habot. Jól lehűtve kínáljuk.
