Happy release day (US) to volume 3 of the Splatoon manga by Sankichi Hinodeya published through Viz Media AND the release (US; Jun. 12 PM, EU; Jun. 13 AM) of the Octo Expansion for Splatoon 2 on Nintendo Switch! The recipe below is inspired by a scene in the first Splatoon manga where the inkling Goggles blasts out of a turf war in order to chow down on some special curry so he can charge up for a powerful attack and win the game (we also learn in this volume that he loves pickled plums and prefers his ice cream in a cone). ;) Goggles' Pineapple Curry Ingredients: ~2 Cups Cooked Fluffy White Rice (see here for tips) 2 Tbsp. Butter 1/2 Large Onion, julienned 1 tsp. Minced Garlic 1/2 tsp. Minced Fresh Ginger 1/4 tsp. Salt 2 Tbsp. Flour 1 1/2 tsp. Curry Powder 1/2 tsp. Cayenne Pepper Powder (optional, to taste) 1/8 tsp. (a dash) Ground Cinnamon 1 Tbsp. Tomato Paste 2 1/2 Cups Cold Vegetable Broth 2 tsp. Worcestershire Sauce 2 Tbsp. Pineapple Juice 1 Tbsp. Crushed Pineapple (or finely minced), drained (if from can) 1/2 Cup Carrot, peeled & diced 1/2 Cup Potato, peeled & diced 1/2 Cup Pineapple Tidbits (or diced), room temperature, drained (if from can) Provolone Cheese Slices, for decorating (optional) Directions: In a large pot on medium heat melt the butter & add the julienned onion. Cook for about 5 minutes & then add in the garlic, ginger, & salt. Cook until the onions are tender & golden, about ~8 minutes or so. In a small bowl whisk together the flour, curry powder, optional cayenne powder (to preference), & cinnamon. Stir this into the onion mixture in the pot & continue to cook for a couple of minutes, stirring, & then stir in the tomato paste. Stir & cook for a couple minutes more. Whisk in the cold vegetable broth, Worcestershire sauce, pineapple juice, & crushed pineapple. Bring to a boil & cook until thickened. *At this point, if you'd like a smooth curry roux, remove from heat & blend this mixture with either an immersion blender or in a standing blender (if using a standing blender put a towel over the top instead of the blender lid so steam can escape, and return to the pot afterwards). Bring the mixture back to a boil & stir in the diced carrots. Let cook for about 6 minutes & then add in the diced potatoes. Cook until the carrots are tender. Remove the curry from the heat & stir in the pineapple tidbits. Serve on a plate of rice, spooning the curry over half or so of the rice. *Optional Decoration: Just before serving stack 2 provolone cheese slices & use a small sharp knife (like a clean crafting knife) to carefully cut out a couple of small splats & a Splatoon squid (see photos for reference, or simply google "Splatoon Squid" or something similar for ideas). Position the cut outs on top of the curry, moving any chunks out of the way, & serve.
