Unhappiness is a form of self-indulgence. A little abstract, but it is true. You may need to think deep and hard about it, or you may get it immediately (I needed a bit of thought!). A luxurious afternoon tea at the Ritz-Carlton is also a form of self-indulgence, but this one is clear to see. Well, for a spot of indulgence, I quite readily picked the tea. This was not just self-indulgence but a shared indulgence. A couple weeks back, Julia and I decided to play "tai-tais" for an afternoon, complete with high tea. Hey, just FYI, we actually do work; just not in an office, and not following office hours or getting substantial remuneration or benefits. So this was a real treat for us. Right after settling into those thick, plush comfy chairs, we spied the little jars of Hediard jams. Already a splendid start. You get to choose a pot of Bernadaud gourmet tea each, and you can change the tea as often as you like, or opt for coffee. Waitresses clad in gold and black glide around discreetly, always refilling your cup whenever it gets empty. The nibbles. This set is for two. It's not a lot of food, we noticed, but when savoured slowly with tea and good conversation, these can go a long way too. I love the golden circular tray holder; it's dramatic and elegant at the same time. They probably vary the items from time to time. But this is what we got that day. For sandwiches, there was an egg mayo and caviar on herbed bread, pastrami with tangy tomato on tomato bread and smoked salmon with roe on brioche. Don't these just say "Eat me!" with their open mouths? The second tier gives you raisin scones, crab croquettes, chicken and fig rolls, and mushroom-potato quiche tarts. Even before we finished these, we were feeling a bit full already, from the sandwiches and tea. The dessert tray yields cheesecake, chocolate cake, lemon custard tart and coffee cream mille feuille. The custard tart tasted like it had salted egg in it! That fragrance only comes out when you eat BOTH the custard with the pastry, but not when you test them separately. Quite intriguing. Tea stretched a leisurely three hours, and yet it seemed like time flew as we chatted and savoured the little bites. Chihuly Lounge is airy, well-bathed in sunlight and surrounded by greenery you can view through the large windows. Something about it is quite relaxing. We soaked it all up and thoroughly enjoyed ourselves. Sometimes I feel how much you enjoy something is up to you, and what you choose to focus on. This afternoon tea (S$36++ per person) was pretty damaging to our skinny wallets. Some may feel it may not be value for money, given the limited tangibles you get. But for us, we felt the whole experience was lovely and worthwhile. Will we be back? Honestly, no, because there are just too many other teas to try out! P.S. Please note that this is the Traditional Afternoon Tea on weekdays (2.30pm to 5pm). On weekends, they have a buffet (more Asian-style food). Que nadie se asuste cuando leáis esto de “espuma de mostaza”, aunque suene complicado, no lo és, sobre todo porque en la receta os he puesto la misma espuma hecha de dos maneras, con sifón para los que lo tengáis y de la forma tradicional para los que no tengáis este aparato tan sicodélico. Esta es otra receta de las tres que presenté para el concurso de Mostazas Maille para Canal Cocina, es fácil y además ideal para aperitivos en estas fiestas que vienen, una manera de presentar las gambas muy original y cómoda, además os puedo confesar que podéis hacer la receta sin que el bolsillo salga muy perjudicado, comprar el gambón que venden en Mercadona y no las gambas rojas tan frescas y hermosas del mercado, esas gambas son para comer a la plancha sin más, para esta receta basta que las pongáis mas económicas. Bueno, allí vamos con la receta, espero que os guste y si tenéis alguna duda ya sabéis que estoy encantada de contestarlas. Bon profit!. Bsssssssssssssssssssssssssssssssssssssssssssss. Ingredientes principales 8 gambones o gambas panko (pan rallado japonés) 2 claras de huevo (pueden ser pasteurizadas) pimentón picante sal y pimienta recién molida colorante alimentario en polvo aceite de girasol para freir las gambas INGREDIENTES PARA LA ESPUMA 250 g. de nata líquida para montar 60 g. de mostaza dijonaise Maille Preparación de la receta VAMOS A NECESITAR ADEMÁS (EN CASO DE HACER LA ESPUMA CON SIFÓN) 1 sifón para espumas 2 cargas para el sifón. ADEMAS Brochetas de bambú para insertar las gambas. Flores para decorar (opcional) PARA LA ELABORACIÓN DE LA ESPUMA DE MOSTAZA DIJONAISE MAILLE (CON SIFÓN). Ponemos en un cazo la nata líquida con la mostaza, llevamos al fuego y disolvemos bien la mostaza, no importa que hierva. Dejamos que se enfríe y la introducimos dentro del sifón, le ponemos las dos cargas, removemos bien y dejamos en la nevera. La espuma es mejor hacerla con un poco de antelación, por lo menos unas dos horas. PARA LA ELABORACIÓN DE LA ESPUMA DE MOSTAZA DIJONAISE MAILLE (SIN SIFÓN). Ponemos en un cazo la nata líquida con la mostaza, llevamos al fuego y disolvemos bien la mostaza, no importa que hierva. Dejamos que se enfrien poco y la metemos en la nevera, tiene que estar muy fría para que después la montemos como la nata. (es muy importante que esté muy fría). PARA LA ELABORACIÓN DE LAS GAMBAS CRUJIENTES. Pelamos las gambas dejándoles la colita y con una puntilla de cuchillo le intentamos estirar el intestino que es el cordoncito negro que tienen dentro ya que tiene arenilla y es muy desagradable al comerlas. Una vez que las tenemos peladas, le introducimos una brocheta de bambú a través del cuerpo de manera que las dejamos estiradas, es mejor pasarlo por lo que sería la parte de arriba de la gamba. Salpimentamos y reservamos. En un plato ponemos el pan rallado (panko), le añadimos un poco de pimentón picante y colorante alimentario (para que de un poco de color amarillento). Cuando pongáis el colorante observaréis que no toma casi color amarillo el pan rallado, no pasa nada simplemente tomará color cuando lo mojemos. En otro cuenco o bol pondremos las claras de huevo y las batiremos hasta que estén ligeramente montadas. Ponemos una sartén al fuego con el aceite de girasol, ha de tener abundante aceite para que se nos frían bien y lo ponemos al fuego a calentar. Mientras el aceite se está calentando empezamos a rebozar las gambas, primero las pasamos por las claras de huevo y luego por el pan rallado (panko)de manera que se pegue pero sin apretar en exceso para que quede el pan mas liviano y ligero. Cuando tengamos el aceite caliente, no en exceso ni tampoco humeante para que no se nos queme el rebozado, ponemos las gambas a freír dándoles la vuelta con unas pinzas o espumadera para que se hagan por todo los lados, han de quedar doradas. Sacar las gambas y ponerlas sobre papel de cocina absorbente. PARA EL MONTAJE DE LA TAPA O PINCHO (1ª VERSIÓN) Cogemos un vasito tipo chupito alargado, sacamos el sifón de la nevera y lo removemos bien, hacemos una prueba del sifón en un sitio aparte, luego ponemos el sifón boca abajo e introducimos la espuma con cuidado hasta la mitad del vasito. Ponemos la gamba de pie en el vasito sobre la espuma tratando de que no se vaya hasta el fondo. Ponemos los vasitos en una bandeja o plato y servimos adornados con flores o con lo que mas os guste. PARA EL MONTAJE DE LA TAPA O PINCHO (2ª VERSIÓN) Cogemos un plato grande que sea bastante plano, ponemos las gambas de pie de manera que queden como una tienda de campaña india y que se sujeten entre si con la punta de la brocheta hacia arriba y al lado un mini bol donde prondremos la espuma de mostaza DIJONAISE MAILLE. PARA LA ELABORACIÓN DE LA RECETA PASO A PASO EN FOTOGRAFÍAS ALGUNOS CONSEJOS -Lo ideal es hacer la espuma con el sifón de esta manera nos queda muy aérea y ligera, si lo hacéis montándola a mano la textura no es la misma pero está bien. -Cuando friamos las gambas el aceite no debe estar humeante ya que este tipo de pan japonés es muy ligero y se quema muy rápido, y conseguiríamos que se nos quemará el rebozado y la gamba de quedara cruda por dentro. -El PANKO o pan rallado japonés lo podéis encontrar en supermercados que tengan productos de cocina oriental o en supermercados de cocina asiática. Si lo compráis en comercios orientales es muy económico. -He elegido la mostaza MAILLE DIJONAISE porque es muy suave, cremosa y delicada.
