How to get palm sugar The juice or sap is extracted from the inflorescences of coconut palms in Phetchaburi. It is then dried under heat. After 5 hours, the palm syrup has finally thickened. Then it is put in a large container and beaten until it crystallises. From this, you can then get coconut blossom sugar (Nam Tan Maprao or palm sugar). A palm tree can release up to two litres of nectar a day, which is enough for a 500 gram pack of coconut blossom sugar. Is palm sugar healthy??
