15min · 2 servings Ingredients • 1 cup frozen hashbrowns • 2 eggs • 1/4 cup shredded cheese • Cilantro • Jalapeños • Pepper • 1/8 cup salsa Preheat oven to 375 degrees In a small cast iron skillet, fry the hashbrowns until crispy, or to your liking Once the hashbrowns are crispy, add the 2 eggs, the shredded cheese, and jalapeños (optional) for a little extra kick Bake in the oven for 9-11 min Remove from oven, top with a dollop of salsa, a pinch of pepper, and cilantro Cool for about 3 min, and enjoy! NOTE: the cast iron skillet will be very hot. Take extra precautions when handling and do not put directly on a countertop surface or table.
