2 medium potatoes, peeled & chopped ā¢ 1/2 head of cauliflower, chopped into florets ā¢ 1/2 a garlic bulb ā¢ 1/4 red onion, chopped ā¢ 3 tbsp evoo ā¢ salt, pepper ā¢ 1 1/2 cups vegetable broth (or more, depending on how runny you want it to be) TOPPING ā¢ coconut cream ā¢ fresh thyme ā¢ baguette ā¢ @gustafoods cheese DIRECTIONS ā¢ add the potatoes, cauliflower, garlic, onion, olive oil, salt, and pepper to a baking dish and cover with aluminum foil. bake at 400F for 25-30 minutes covered and 10 more minutes uncovered. add all the ingredients to a blender along with vegetable broth and blend until smooth. pour into a bowl, top with coconut cream, fresh thyme, grated cheese, and crushed pepper. enjoy!
