La Banitsa (ou Banitza) est un plat Bulgare, qu'on fait également en Grèce (tyropita) ou en Serbie (gibanica).On la trouve sucrée ou salée et on peut y mettre des épinards, des herbes, de la viande hachée ou en version sucrée : des pommes, des amandes ou des raisins secs . Voici celle que j'ai faite en version salée, après avoir vu un documentaire où une paysanne Bulgare étalait sa pate si finement, qu'elle en recouvrait presque toute sa grande table et sa toile cirée, avant d'y rouler un mélange à la feta dedans et de la cuire, en forme d'escargot, dans un immense moule à tarte.A déguster toute chaude, dorée, croustillante et moelleuse à l'intérieur, avec une salade.A la version Bulgare basique que je trouve un peu fade, j'ajoute quand même des herbes ou autres ingrédients.....
