Recipe video above. This is how I make Mexican Shredded Beef. The sauce is rich, thick and full of flavor, and the beef is very tender and juicy. I use this shredded beef for tacos, burritos, enchiladas, quesadillas and even to make sliders - see in post for list of ideas and directions!
Made some Carne Guisada with floor tortillas for dinner!
Recipe video above. The best Mexican Meatballs are spiced with Mexican flavours and made with:1. crushed corn chips instead of breadcrumbs (more flavour!);2. a combination of beef AND pork (softer and tastier); and3. are browned in the oven then simmered in the chipotle tomato sauce for a winning flavour exchange: meatball juices leech into the sauce, and the meatballs absorb the sauce flavour. Win win!Spiciness: Chipotle powder and fresh jalapeno in meatballs gives it a warm buzz but definitely not spicy. Same for chipotle chilli in sauce. Feel free to reduce both and add a pinch of paprika in its place.
Birria de res is a tender meat stew packed with chili flavor served on its own, or chopped and piled onto doubled up corn tortillas (tacos de birria).
This delicious birria recipe (Mexican beef stew) is so flavorful and comforting, and it's easy to make in the Instant Pot, or see notes below for how to make it in the Crock-Pot or on the stovetop.
