A slow braised Italian style pot roast in a tasty tomato sauce.
This Ina Garten Pot Roast recipe (aka Company Pot Roast) is a rich, savory, and elegant dish that's perfect to serve for your next dinner party. In this foolproof guide, we'll teach you how to make it in the oven and in your slow cooker. However you choose to make it, it's sure to impress!
This recipe is inspired by a method I learned while working at Fork in Philadelphia nearly 20 years ago. There, the parboiled potatoes were pan-seared to order. Here, they are roasted, which allows for large-batch cooking. Notes: Scale the recipe up or down as needed. Parboil the potatoes hours or days ahead of time. To make the potatoes ahead: roast them as directed, then let them cool completely. Store in the fridge for up to 2 days. Reheat by spreading them onto a sheet pan and roasting them at 425ºF for 10 minutes or until heated through.
Braised beef is one of my favorite things to make for dinner in the fall and winter. It's cozy, comforting, and practically guarantees an impressive result – all with very minimal effort required. This particular recipe is a slightly more budget-friendly version of my popular Damn Good Red Wine Braised Short Ribs, replacing pricier beef short ribs with a hearty chuck roast instead. After an hours-long simmer with aromatic veggies, fresh herbs, and red wine, the humble beef chuck transforms into a succulent, fall-apart tender roast that practically melts in your mouth – it's kind of like the best pot roast you'll ever have! I've included lots of braising tips and tricks in the blog post, above, and some alternate cooking methods are detailed in the Recipe Notes, below. ♡ Happy cooking!
These are the most flavorful crispy roast potatoes you'll ever make. And they just happen to be gluten-free and vegan (if you use oil) to boot.
Recipe video above. A 3-hour lamb shoulder is great. A 12-hour lamb shoulder is better! The meat is even more succulent because a lower cooking temperature means less moisture loss, and better flavour infusion from the rub. The sauce is a Lamb Jus made using the braising juices so it has phenomenal flavour. Don't be intimidated, it's simple and no more difficult to make than gravy! This is an excellent make-ahead recipe for gatherings. Why? Because you can make up to 4 shoulders in one standard oven. And the room for error is also almost nil; it's almost entirely hands-off cooking that magically takes care of itself overnight. Most importantly, the meat is so juicy it reheats 100% perfectly. I cook it overnight and reheat to serve that evening.About scaling up: 2 shoulders can be cooked in one large pan with no change to cook time. 4 shoulders (2 lambs in 2 pans, on 2 shelves) takes about 14 to 15 hours.
Asian Pot Roast is a twist on a classic. Perfect for a fall/winter Sunday dinner, this pot roast isn't overpoweringly "Asian," but it packs a ton of flavor.

Recipe video above. This is a combination of 3 simple things that are devilishly good together: slightly spicy caramelised maple roasted carrots, crispy seasoned chickpeas and a cooling, creamy yogurt sauce with a subtle hint of garlic. The chickpeas add terrific crunch and because they're a starch, you can easily serve this substantial side dish as a meal. Both the carrots and chickpeas take around 30 minutes in the oven but you might need to add an extra 5 minutes or so depending on how long you take when you take the trays out to toss/season etc .
