香妃蛋糕 (烤盤28cm x 28cm) 材料: 蛋黃麵糊: 蛋黃5顆 米糠油30g(或淡味的液體油) 低筋粉90g( 預先過篩二次 ) 鮮奶70g 蛋白霜: 蛋白5顆 砂糖50g 檸檬汁/白醋1/2小匙 表面格子紋及夾餡: 沙拉醬適量 椰絲適量 蛋糕卷做法: 1)米糠油、鮮奶拌勻,慢火煮至開始冒煙(60-80度),關火,加入低粉快手拌勻。 2)蛋黃打散拌勻,分數次倒入麵糊中拌勻。 3)蛋白先攪打至起泡泡,加入檸檬汁及砂糖 ( 糖分3次加入 )打至8分發。 4)將1/3蛋白霜加入步驟 (2)拌勻,再倒回剩餘的蛋白霜中拌勻。 5)倒入烤盤中抹平,在桌上輕輕敲兩下,用沙拉醬擠上格子紋路,撒上椰絲。 6)放進已預熱焗爐160度焗約20分鐘,然後調至150度約8分鐘。 7)出爐後放涼,對半切開,抹上沙拉醬,撒上椰絲夾起,隨喜切件即成。 (烤盤上要墊烘焙紙或烘焙布) 夾上沙拉醬及椰絲 簡單易做又好吃~ 如果喜歡肉鬆也可以夾上肉鬆呢

As promised, here's the apple cake recipe! It's been a family favourite for many years - I have no idea where the original recipe came from, but it's written on the inside cover of my mum's Dairy Book of Home Cookery from the late 70s, so it's been around in my family for as long as I can remember! It's a really easy recipe - you just rub butter and flour together and then chuck in all the other ingredients, and it's so packed full of apples that you end up with chunks of apple lightly bound in spiced cake mix rather than a traditional cake batter! Which can surely only be a good thing. I also love it because it doesn't involve sultanas (why do so many apple recipes insist on including the horrible little things?) but if you don't have a sultana aversion, feel free to chuck a few of those in as well. Somerset apple cake 4oz butter or margarine (we use Stork for cakes) 8oz self-raising flour 4oz sugar 1 egg, beaten 1 teaspoon mixed spice 8oz peeled and diced cooking apples (3-4 medium/large apples) A little milk Rub the butter and flour together, then add the sugar, spice, egg and apples and stir until well mixed. Add sufficient milk to make a sticky consistency. Grease and flour a 7–8” cake tin, spoon in the mixture and bake at 180C for about an hour in the centre of the oven or until firm and golden. You can test with a skewer but you might need to give it a few pokes because you'll often find some apple on it rather than uncooked cake!

櫻花紅桑子慕絲 (直徑約7.5cm,高約5cm的空心圓模4個,或6"蛋糕模1個) 消化餅底: 消化餅85g 無鹽牛油35g 做法: 1)壓碎消化餅 2)牛油座熱水至溶化 3)倒入餅碎中拌勻 4)消化餅倒入模中壓實,放進雪櫃冷藏約30分鐘。 紅桑子慕絲: 淡忌廉120g 急凍紅桑子果泥100g 鮮奶30g 黃砂糖20g 魚膠片5g 做法: 1)淡忌廉加糖打至有紋路即可。 2)魚膠片浸軟,放入鮮奶中座熱水至魚膠溶化,倒入紅桑子果泥中拌勻。 3)將步驟(1)及(2)拌勻。 4)平均倒入已放餅底的模中,冷藏一小時。 櫻花果凍: 冷開水250g 桑子果泥1/2t 砂糖25g 魚膠片11g 鹽漬櫻花8朵(預先洗去鹽份,冷開水浸泡一小時) 做法: 1)取少量份量中的冷開水加入浸軟的魚膠片,座熱水至魚膠溶化。 2)魚膠水加入冷開水中拌勻,再加入桑子果泥拌勻。 3)取出紅桑子慕斯,倒入果凍液,放入櫻花,繼續冷藏3小時以上。 粉嫩的顏色,如初春的暖心, 櫻花飄逸如裙擺, 少女心都跑出來了...:P We'll Be Okay - Imaginary Future & Kina Grannis
