Voeg de gelatinemassa toe en laat afkoelen tot 37 °C. Voeg de boter toe in 3 delen en op matige snelheid. Voeg vervolgens de mascarpone toe en draai de massa glad op hoge snelheid. Vul een spuitzak en laat minstens 4 uur opstijven in de koelkast. Limoencrémeux interieur: Bereid de basissiroop door het water en de suiker aan de kook te brengen. Voeg het citroengras en de zestes toe en laat 15 minuten infuseren. Giet door een fijne zeef en weeg 107 g af. Meng het gelatinepoeder met 20 g koud water en laat 20 minuten weken. Verwarm 107 g basissiroop, het limoensap, de suiker en de eieren in de Thermomix tot 84 °C. Voeg de gelatinemassa toe en laat afkoelen tot 37 °C. Voeg vervolgens de zachte boter toe in 3 delen en op matige snelheid. Voeg daarna de mascarpone toe en draai de massa glad op hoge snelheid. Vul een spuitzak en laat minstens 4 uur opstijven in de koelkast. Hazelnootsponscake interieur: Meng het amandelpoeder, de hazelnoten, de suiker en de bloem in een blender op hoge snelheid. Voeg de eiwitten en de eierdooiers toe en draai nogmaals door. Wrijf de massa door een fijne zeef en vul er een sifonfles mee. Plaats er 3 gaspatronen op, schud goed en laat 1 nacht rusten in de koelkast. Laat daarna op kamertemperatuur komen. Schud de sifon goed. Vul de bekertjes voor de helft en gaar ze in de microgolfoven (1 minuut 45 seconden voor 6 bekertjes op 500 watt). Laat afkoelen voor gebruik. Bewaar de sponscake in de bekertjes in een afgesloten doos. Snijd de sponscake met een mes uit de bekertjes en pluk er stukjes af. Gebruik een ½ bekertje per vorm. Pralinébiscuit interieur: Verwarm de oven voor op 220 °C. Klop de eierdooiers, de pralinépasta, de hazelnootolie en het zout wit in een keukenrobot. Zet opzij, reinig en ontvet de kom van de keukenrobot. Klop dan het eiwit op op lage snelheid tot het in volume verdubbeld is. Voeg er geleidelijk aan de suiker aan toe. Klop het eiwit verder op tot stijve pieken. Spatel het opgeklopte eiwit onder de wit geklopte massa in 3 delen. Zeef er de bloem en het roompoeder over en spatel ze er voorzichtig onder. Strijk een laag beslag (8 mm) uit op een bakmatje. Bak goudbruin op 220 °C. Neem de biscuit van de warme bakplaat en laat snel afkoelen op een koude werkbank. Bestuif licht met bloem en bedek met bakpapier. Draai het bakmatje en het bakpapier samen om en verwijder voorzichtig het bakmatje. Bewaar de biscuit in een afgesloten doos in de diepvriezer. Steek cirkels uit van 6 cm. Mangoazijngelei interieur: Breng de amandelmelk, de passievruchtenpuree en de azijn aan de kook. Meng de suiker en de pectine, voeg toe aan de opgekookte massa en laat ½ minuut doorkoken. Laat de massa 1 nacht afgedekt rusten in de koelkast. Roer de gelei glad met een garde en vul een spuitzak. Bewaar in de koelkast tot gebruik. Chocolademousse: Breng de room aan de kook met het vanillestokje en de tonkaboon en laat infuseren. Smelt de chocolade. Bereid een pâte à bombe door het water, de eierdooiers en de suiker al kloppend te verwarmen tot 84 °C. Klop daarna luchtig in een keukenrobot tot de massa 40 °C is. Verwarm de geïnfuseerde room opnieuw en giet door een zeef. Voeg toe aan de chocolade in 3 delen en meng al roerend tot een glanzende ganache. Meng de ganache met de luchtig geklopte pâte à bombe. Verwarm de massa in een microgolfoven tot 45 °C. Spatel er de opgeklopte room onder in 3 delen. Vul een spuitzak en vul de mal voor ⅔ met de chocolademousse. Voeg aan elke mal 30 g passiecrémeux, 30 g limoencrémeux, een ½ bekertje hazelootsponscake en 10 g mangoazijngelei toe. Sluit elke mal af met een stukje uitgestoken pralinébiscuit en laat minstens 1 nacht opstijven in de diepvriezer. Plaats de bevroren mousse op het bord en laat ontdooien in de koelkast.
