Ingredients 350 g butternut pumpkin 500 g water 30 g grated parmesan cheese 1 onion, quartered 1 clove garlic 150 g Weight Watchers bacon, chopped 375 g Arborio rice 1 chicken stock (I use 1 litre of water and 4 chicken stock cubes in this recipe) 1 tbs olive oil 30 g light margarine Method Insert chopping blade, add the water to jug and insert the steamer basket. Add cubed pumpkin to the basket and cook on speed 3 for 15 minutes, until tender. Remove from jug and set aside, pour out the water, Add onion and garlic to the jug and pulse until desired consistency. Insert the butterfly attachment. Add oil and bacon and cook for 5 minutes on speed 2, 100 degrees. Add rice and cook for 2 minutes on speed 2, 100 degrees. Add stock and pumpkin and cook for 25 minutes on speed 1, 90 degrees. Add parmesan and margarine and mix for 1 minute on speed one. Divide amongst 6 serving bowls and enjoy.
