Here is a recipe of healthy multigrain savoury waffles with quinoa. You can make them with a lot of variations by adding different things like veggies, boiled chicken, ham, sausages, or boiled macaroni in the batter. Kids will love them. Today I have added quinoa which is a super food. Multigrain flour is available in the stores these days. You can even mix various flours like whole wheat, soya, ragi, jowar, bajra, gram flour, semolina etc etc.. .. whatever is available in your kitchen in equal proportion. Ingredients: Multigrain flour - 1 cup Boiled quinoa .... 1/2 cup Yogurt .............. 2 tbsps (optional) Onions ............ 2 tbsps (finely chopped) Green chillies .. 1-2 (finely chopped) Coriander leaves .. 2 tbsps (finely chopped) Salt ................. to taste Turmeric powder .. 2 pinches Roasted and crushed cumin seeds .. 1/2 tsp Oil ............. to brush on the waffle maker. Method: Soak 1/4 cup quinoa for 1 hour. Drain the water and boil it with half cup water adding little salt. It cooks perfectly and no need of draining the water as the nutrients will be lost. Let it cool. Now mix together all the ingredients mentioned in the list.except oil and make a thick batter adding little water as needed. Brush the waffle maker with oil on both sides. Spoon the batter into it and spread it. Close it and switch it on. It should be done in 4-5 minutes. (the light indicates when done) Remove them. Serve hot with any sauce or chutney. Absolutely finger licking kaleji fry made in dhaba style. Tastes so delicious with tandoori rotis, naans or rumali rotis. Slow cooking and Sauteing / bhunofying gives the dishes a real good taste which is missing in the pressure cooked food. The liver gets cooked in its own juices and the ingredients are added one by one while sauteing. The salt has to be added at the finishing stage. This is the secret of a perfectly cooked liver. If you add it while cooking it becomes hard. Ingredients: Goat kaleji / liver .... 400 gms Onions .......... 2 sliced finely Tomato ........ 1 small Yogurt ......... 4-5 tbsps Green chillies ... 2-3 (you can add more if you like ) Ginger .......... 1 tbsp grated Garlic .......... 1 tbsp crushed Black pepper corns .. 1 tsp Bay leaves ............. 1-2 Cinnamon stick ..... 1 piece Black cardamom .... 1 Cloves ................ 4-5 Coriander leaves ... handful Mint leaves ........ few Turmeric powder ... 1/2 tsp Coriander powder .... 1 tsp Red chilli powder ..... 1/4 tsp (or more ) Garam masala powder ... 1/2 tsp Kasoori methi ... 1 tsp Salt ..... to taste Slit green chillies and ginger juliennes ... for garnishing. Desi ghee ..... 1/4 cup (you can use oil if you like ) Method: 1. Wash the liver and cut into cubes. 2. In a pan heat the ghee and add the whole spices mentioned - pepper corns, cloves, black cardamom, cinnamon stick and bay leaves. 3. When they give out the aroma, add the sliced onions, and saute until light brown. 4. Add the ginger, garlic and green chillies and reduce the flame. 5. Now tip in the liver cubes and keep frying on a low flame without covering the pan. 6. Add the spice powders except garam masala, which you save to add at the end. 7. Now add the tomato pieces and continue cooking and stirring on low flame until you see the tomatoes are well blended. 8. Now add the whisked yogurt and mint leaves and coriander leaves. Mix well and cook until the yogurt is absorbed and the ghee / oil starts separating. 9. Now is the time to add the salt, kasoori methi and garam masala powder. Stir well and let it cook for a minute. 10. The liver is ready to be served. Garnish with ginger juliennes and slit green chillies. Serve it dhaba style with rotis or naans, a glass of lassi, raw green chillies, a piece of lemon nad onion slices. Here is a delicious snack made with keema and macaroni using the flavourful "Tangier Spice Mix" from "Sprig". It is quite filling and healthy as it is baked in a muffin tray. Make and enjoy the Tangier Keema Macaroni Muffins. Ingredients: Keema ... 250 gms Eggs ...... 3 Macaroni .. 1/2 cup Onion ....... 1 Green chillies ... 1 Ginger garlic paste .. 1 tbsp Tangier spice mix ... 1 tbsp Garam masala ....... 1 tsp Cumin powder ..... 1/2 tsp Coriander powder .. 1/2 tsp Red chilli powder ... 1/2 tsp Salt ......... to taste Coriander leaves ... handful Oil ................... 4 tbsps For garnishing: Hung curd ..... 6 tbsps Garlic powder .. 1/4 tsp Method: 1. Wash the keema well . Squeeze out the water and set aside. 2. In a pan heat oil and saute the onion until golden brown. Add ginger garlic paste and green chillies. 3. Now tip in the keema and stir fry for few minutes. Add salt and all the spice powders except the tangier spice mix as we will add it in the end before baking the muffins. 4. Saute well and add half cup water. Simmer until done. Add the coriander leaves and simmer for a while until it is completely dry. 5. Remove it in a bowl and set aside to cool. 6. Boil the macaroni with little salt and just enough water to cover it. Add a little oil. After one or two boils close the gas and cover the pan with a lid. 7. In few minutes the macaroni will be fluffy and done. Let it cool. 8. Beat the eggs with little salt. 9. In a large bowl take the keema, macaroni, coriander leaves and add the egg mixture. 10. At this point add a tablespoon of Tangier spice mix. Stir well to mix. 11. Grease the muffin tray and spoon the keema mixture equally. Makes 4 muffins of large size. 12. Bake them in a pre-heated oven at 250 C for 30 minutes. 13. Remove the muffins from the mould. 14. Mix a little salt and garlic powder in hung curd. Pour it in a piping bag with a star nozzle and garnish the muffins before serving. Serve with onion kachumar. Chakli is one of the favorite tea time snack . Adding Palak purée gives it a lovely flavour and colour along with the nutrition. Ingredients: Spinach - 1 bunch Mint leaves - 1/4 cup Coriander leaves - 1/2 cup Green chillies - 3 - 4 Maida - 1 cup Rice flour - 1/2 cup Besan - 1/2 cup Sesame seeds - 1 tbsp Oil or butter - 2 tbsps Salt - To taste Baking powder - 1 pinch Oil - to fry Method: Wash the greens, cut them and boil adding little salt, pinch of baking powder to retain the green colour. Blend the purée and let it cool. In a large platter take the three flours, sesame seeds, little salt and 2 tbsps oil. Mix them. Knead this adding the purée little by little. Make the dough and set it aside. Grease the chakli mould and put the dough into it. Make chaklis and keep them on on a greased surface. Heat the oil in a pan and fry them on medium and low flame turning the sides until crisp. Remove them on an absorbent paper. Allow them to cool before putting them in an air tight container. Crumpets are griddle/ skillet cooked leavened and spongy round breads which are an English tea-time favourite. These are very different from English muffins. "Classic crumpets have a smooth round bottom, and a top riddled with small holes. They are served fresh from the griddle or toasted, and can be topped in jam or clotted cream, although butter is the traditional crumpet topping. Crumpets are never split, unlike English muffins, and they have a slightly bland flavor and spongy texture which absorbs butter remarkably well. The concept of toasting crumpets over a fire is often associated with companionable rainy days in British fiction. For people who are still confused about the differences between crumpets and English muffins, remember that crumpets have a holey top, they are not split, and they are far less "bready" than English muffins tend to be. It is believed that the English muffin may have been invented by someone who was trying to replicate the crumpet, which explains the commonalities between the two. The recipes for English muffins and crumpets are also very different, with crumpets being made from batter and English muffins being made from a dough." Ingredients: Milk ...... 1 and 1/2 cups Sugar .....1 and 1/2 tbsps Active dry yeast.... 1 and 1/2 tsps All purpose flour .....1 and 3/4 cups Softened butter .....1 and 1/2 tbsps Salt ....1/2 tsp Baking powder .....3/4 tsp Water (if necessary) 1/4 cup Butter or oil to make the crumpets 1 tsp Method: Warm 1/4th cup of milk and dissolve the yeast and sugar. Set aside until it bubbles. Now add the flour, butter, salt and the remaining milk. Whisk to make a smooth batter of pancake consistency. Cover and let it rise again for about 45 minutes. Check the thickness of the batter and add a little milk if needed. It should be of pouring consistency. Add the baking powder and mix well. Grease the edges of a ring mould (cutter). Spoon a tsp of oil on the griddle and place the mould on it. Spoon the batter into it until 3/4th high as it will rise while cooking. Cover the skillet and allow to cook on medium flame. It takes about 5 minutes.When done the crumpets should have holes on them and look dry while the bottom is golden brown. Now carefully remove them from the rings using a sharp knife and cook the other side lightly for about a minute or so. Repeat this process to make all the crumpets. Serve with butter at tea time. You may serve them with any other topping also if you like. I have served them with berry compote and cream.
