Bifanas are traditional Portuguese sandwiches made with thin slices of pork that are marinated and simmered in a sauce of white wine, garlic, hot pepper paste, lemon juice and other seasonings. They are served on papo secos (Portuguese buns), topped with sautéed onions and sweet peppers. You will find bifana sandwiches all over Portugal and similar to any famous recipe, everyone has their own variation. My recipe has been handed down to me from my mom. It couldn’t be any tastier or easier to make and I hope you enjoy it.

It is a perfect storm of flavors and textures coming together to sweep you up and take your taste buds to wanting more and more.

🥔LISTE DES INGRÉDIENTS Porc : J'ai utilisé de l'échine. Elle est un peu plus grasse que de la côte de porc, mais le gras apporte du goût au plat. Choisissez de l'échine de bonne qualité. L'idéal est d'avoir de la viande coupée extra-fines. On en trouve parfois dans les magasins portugais. Ail : Élément indispensable pour cette marinade, il apporte un goût indispensable pour toute bonne bifanas. Vin blanc : Il sert à déglacer la poêle et à apporter de l'acidité à la recette. Porto : son côté sucré va venir légèrement casser l'acidité du vin blanc et du concentré de tomates. Il va apporter de la douceur à ces bifanas et également un petit goût sympa. Concentré de tomates : Il apporte un bon goût de tomate et va donner une belle couleur à la sauce. Paprika : il donne aussi une belle couleur à la sauce. Laurier : il apporte une saveur unique. On le retrouve très souvent dans la cuisine portugaise. Huile d'olive : La base de la cuisine portugaise. 💡CONSEILS ET ASTUCES Je fais mariner la viande pendant 24h. Vous pouvez laisser mariner moins longtemps, en gardant en tête de la faire mariner au minimum 1h pour retrouver les parfums des bifanas. Pensez à bien égoutter la viande avant de la mettre à cuire. S'il vous reste de la marinade, je ne vous conseille pas de la garder sachant que la viande crue à mariné dedans. Laisser réduire la sauce selon votre convenance. Je préfère quand la sauce est bien réduite et vient enrober la viande. Vous pouvez laisser un peu plus de jus si vous aimez que ce soit plus en bouillon. Goûter la sauce en fin de cuisson. Si elle est un peu trop acide, n'hésitez pas à ajouter un petite pincé de sucre 🥘LES VARIANTES Vous pouvez ajouter des légumes comme des poivrons. Pour une touche plus épicée, ajoutez un peu de cumin. Pour une touche épicée, n'hésitez pas ajouter du piri-piri, la traditionnelle sauce pimentée portugaise. Vous pouvez le remplacer par du tabasco. 🔪 PRÉPARATION Étape 1 : mettre à mariner la viande avec l'ail, le vin blanc, le laurier, le paprika. Laisser mariner 24h. Étape 2 : mettre à cuire le porc. Étape 3 : ajouter le porto, le concentré de tomates, et le paprika. Étape 4 : laisser réduire la sauce jusqu'à ce qu'elle enrobe la viande. 🍴AVEC QUEL ACCOMPAGNEMENT ? O lanche ajantarado para comemorar o aniversário da Benedita foi decidido em cima da hora. Com ela e o Zé Maria doentes durante a semana, não sabia bem se iria ou não ter oportunidade de organizar algo para comemorar o primeiro ano da Benedita. Portanto foi de véspera, que finalmente tudo se decidiu. E no dia seguinte lá iria ter em casa perto de 30 pessoas. A ementa iria portanto ser simples, e não sei muito bem porquê, lembrei-me de duas coisas de imediato: Bifanas e Caldo Verde. E decidi fazer as bifanas à moda por Porto, por serem mais “práticas” de preparar para tantas pessoas. Único problema é que nunca tinha feito bifanas à moda do Porto, e queria uma receita que valesse a pena. Deixei o desabafo na minha página do facebook, com pedidos para uma boa receita, e várias foram as pessoas que me sugeriram procurar a receita do Necas de Valadares no Youtube. E assim fiz. Adaptei pequenas coisas, como o uso de óleo e as quantidades, porque a receita não é precisa nesse ponto, e acho que não me saí mal, porque as bifanas foram largamente apreciadas. Além das bifanas e do caldo verde e de algumas sobremesas, houve também travessas várias de queijos e enchidos entre uma ou outra coisa que vos irei dar conta nos próximos dias, porque os pedidos foram bastantes. Para já aqui fica a receita das bifanas, preparadas a partir do video do Neca de Valadares (se quiserem ver o original é só procurar no youtube!) Ingredientes: 1kg de bifanas de porco cortadas fininhas 2 folhas de louro 40ml de azeite 2 colheres de sopa de banha 1 tomate pelado 4 colheres de sopa de polpa de tomate 3 dentes de alho sal e pimenta q.b. piri-piri q.b. 1 colher de chá de cominhos em pó 150ml de vinho branco água q.b. Preparação: Num tacho largo coloque o azeite e a banha e deixe aquecer. Junte depois o louro e os dentes de alho grosseiramente picados e deixe refogar um pouco. Junte depois o tomate pelado (só o tomate, sem molho) e deixe cozinhar um pouco em lume brando. Acrescente a polpa de tomate, o vinho branco e deixe estufar uns minutos em lume brando. Retire depois as folhas de louro e, com a varinha mágica triture tudo. Retifique de sal e pimenta, acrescente o piri-piri a gosto e junte os cominhos. Mexa bem e acrescente as bifanas no molho a ferver. Deixe cozinhar uns minutos e acrescente um pouco de água, retificando os temperos. As bifanas devem estufar lentamente neste líquido (eu coizinhei com o tacho tapado e em lume brando), e devem ter bastante molho, portanto, acrescente mais água (e retifique temperos ) se achar necessário. Sirva bem quente, colocando molho no pão e de seguida as bifanas. Bom Apetite!
