Karamellipossu Farang Liha ja haudutusliemi 600 g possunniskaa eli kasleria 1 l vettä 1 valkosipulinkynsi n. 10 cm pala inkivääriä 1 korianterinjuuri pari valkopippuria 2 dl valkoviiniä 4 dl vähäsuolaista soijaa 1/2 dl ketjap manista eli makeaa soijakastiketta 1 dl osterikastiketta 1. päivä Karamellipossun valmistaminen aloitetaan jo päivää ennen tarjoilemista. Valmista possun haudutusliemi. Kiehauta kaikki ainekset kattilassa, lisää liha liemeen kokonaisena ja hauduta 160-asteisessa uunissa kattilassa 3-4 tuntia. Lihan tulee olla ylikypsää. Nosta liha liemestä ja laita se prässin (paino) alle yöksi. Siivilöi liemi ja ota se talteen. 2. päivä 2 1/2 dl lihan haudutuslientä 5 tähtianista 1 kanelitanko Kuori hyytynyt rasva haudutusliemen päältä, mittaa kattilaan tarvittava neste ja lisää siihen tähtianis ja kaneli. Kiehauta ja anna jäähtyä lieden laidalla. 200 g palmusokeria 1/2 dl vettä 1/2 dl sokeria rypsi- tai auringonkukkaöljyä friteeraukseen 3 rkl rapeaksi paahdettua vakosipulia 3 rkl rapeaksi paahdettua salottisipulia 2 punaista chiliä 2 rkl riisiviinietikkaa 1ruukku korianteria Valmista seuraavaksi karamelli. Mittaa sokerit ja vesi toiseen kattilaan. Kuumenna vähitellen, kunnes sokeri sulaa. Karamellisoi, kunnes seos alkaa tummua. Lisää haudutusliemi. Seoksen tulisi "räjähtää" ja yhdistyä paksuksi karamelliksi. Varo näppejäsi! Leikkaa possu pieniksi kuutioiksi. Lämmitä öljy 170-asteiseksi. Friteeraa palat öljyssä kullanruskeikski. Valuta ylimäräinen öljy pois. Yhdistä kulhossa possu, karamelli, chiliviipaleet, korianteri ja rapeat sipulit. Pirskottele päälle riisiviinietikkaa. P.S. Pakastin ylimääräisen haudutusliemen ja aion käyttää sitä myöhemmin muissa aasialaisissa ruoissa.
