Inspired by our Filled Wool Roll Bread, this recipe uses the same Japanese Milk Bread dough to form adorable mini wool rolls. The soft, pillowy bread is swirled with two flavors of frangipane filling: orange cardamom and raspberry (so your guests can choose!). The mini wool rolls are arranged in a quilt-like pattern in the pan for an impressive presentation. Even if your rolls don’t look perfect going into the oven, they’ll fill out the pan as they bake to create a stunning final product. This recipe was one of our Bake of the Week features for March 2024.

This is my first time making bread rolls and i tried to make them as good as i thought….They are not perfect but they are as close to perfect as they can be. I think next time i will need to kneed a bit less so they are a bit more softer.Ingredients:– 500 g. flour– 1/2 tbsp. salt– sprinkle of sugar– 250 ml. warm water– 6 tbsp. olive oil– 1 tbsp Dry yeast Add the dry yeast to the 250 ml of warm water and put in a warm place for about 10-15 minutes until it forms a froth on top.In the meantime mix the flour and the 1/2 spoon of salt. When the water and yeast mixture is ready add it to the dry ingredients bit by bit – add a bit of water and then mix again. After all the water is incorporated add 4 tablespoons of olive oil and mix well. You can add more water if you think that you need but as you will start kneading you will see that there is no need. Kneed the dough for about 10 minutes on a surface sprinkled with flour. Put the dough in a recipient and cover it with cling film and let it grow. Is good to put the dough in a warm place as it grows faster. When the dough doubled start breaking pieces of the dough and form little balls. Place them on a floured baking tray and place in a preheated oven at 190C. Keep in the oven for about 20-25 minutes or until the dough has become golden as per about picture.I didn’t sprinkle them with any water but my mum said that if i did they would’ve probably been a bit more soft. They were good anyway to make sandwiches.
