I also now use 3 eggs as opposed to 4, 1 tablespoon vanilla as opposed to 1/2 teaspoon, and 1 teaspoon Diamond Crystal kosher salt as opposed to 1/2 teaspoon table salt. Notes: A digital scale is best for measuring flour and cocoa powder. This one is reasonably priced. Buy it! Baking by weight will change you forever. There's no better time than right now. Cocoa Powder: For years I used Hershey's natural cocoa powder. Recently, however, I switched to Droste Dutch Processed Cocoa, mostly because one of you told me there are concerning levels of lead in Hershey's cocoa powder. But now I've learned that Droste has even higher levels of lead than Hershey's. All of this said, if you do the math, each brownie likely contains roughly 4 grams of cocoa powder. Still not ideal, and I will report back if I find a cocoa powder that works well and has lower levels of lead. Stay tuned! In the meantime, here are some recommendations from readers: Stella Park's recommendation: Cacao Barry Extra Brute (2 pack) | (1 pack) Navitas Viva Naturals Organic Cocoa Fry's Rodelle The pan. This is fair trade fortnight and on Friday we are gong into some schools to teach the children about fair trade, linking it to to Jesus' message of freedom and good news for the poor and oppressed (see Luke 4, where Jesus quotes Isaiah 61) and what Christians believe about behaving justly. As a fun way in to thinking about fair trade and ideas of fairness in general, here's an easy game to play! You will need: A game sheet per child, dice (one per pair or 3 is good) Click here to print off a sheet with 2 game sheets on it, as below. Children work in pairs or 3s to throw the die, but have their own individual sheet to colour in. Children in a pair/ 3 take it in turns to throw the die. Colour in a section of the Fair Trade symbol according to the number thrown. Eg. If you throw a 2, colour in a section with a 2 inside it. If you throw a number , but have already coloured in all that number's sections, you will have to wait until your next throw! The first person to colour in all the sections on their sheet is the winner. This game helps to introduce the fair trade symbol which looks a bit like a person with their hand in the air to say they agree and want to join in. It also helps to think about issues of fairness, but quite subtly. How fair is the game itself? Some numbers appear more often than others do. Does this make a difference? Have fun!

RAISIN FILLED COOKIES My Mom has been making these cookies all her life. Cookies Dough: CREAM TOGETHER: 1 cup butter 1 1/2 cups sugar ADD and BEAT 3 eggs 6 Tablespoons milk 1 teaspoon salt MIX TOGETHER: 5 1/2 cups flour 3 teaspoons baking powder ADD TO LIQUIDS and BLEND TOGETHER Roll thinly and cut into circle shapes. I use a glass about 3 inches in diameter. Mom cutting out cookies… Make the Raisin Filling: 3/4 of a package of raisins 1 1/2 cups sugar 1 or 1 1/2 cups water – it will thicken like picture below. Add more water if it’s too thick. It should be like a thick gravy. Add a good sized tablespoon in the middle of each round cookie. More is preferable to less because this provides the moisture that makes this cookie so special and succulent. :) Now add another cookie on top. And crimp it together at the edges.
