A colorful rainbow jello dessert is so perfect for the warm summer months. It's relatively easy to make and is perfect for birthday parties, summer barbecues or many a treat for your little ones. This version uses juice for for the colored layers - omitting all the unnecessary sugar, artificial dyes and other chemicals.

The most popular thing at the party was none other than this 11 layered rainbow jello treat. 11 layered Rainbow Jello Squares 6 packages JELLO (3oz each) - strawberry, orange, lemon, lime, berry blue, and grape 8 1/2 envelopes KNOX unflavored gelatin 1 can of sweetened condensed milk (14 oz) You can use any flavor that you wish. I chose the flavors based upon the color. Here is what the Knox Gelatine looks like. Look on the top shelf of your grocery store. Mix the can of condensed milk with 1 3/4 cup hot water. I microwaved the water in a pyrex cup for 3 minutes to get it to boil. Set aside. Mix 2 1/2 envelopes Knox gelatine with 1 1/4 cup hot water Combine with milk mixture and set aside Combine Grape JELLO, 1 envelope Knox gelatine and 1-1/2 cups hot water. Cool, then pour into a 9×13 pyrex and a 10x10 pyrex square. Place in the freezer for 15 minutes or until firm. Now would be a great time to get your next layer (Blue Raspberry) ready so that it will be cool enough to pour over when ready. Pour a layer of the milk mixture on top of the grape JELLO. I didn't measure out how much I poured, but just eye balled it. Freeze to set. Next pour the blue layer and then prepare the green layer... Pour the milk mixture over the blue layer ...followed by pouring the green layer while preparing the yellow layer... ...repeat, you get the idea... continue until you get to the last layer, the red layer. Note: If the milk mixture starts to gel, I found that putting it in the microwave for 10 seconds liquifies it again, but doesn't make it overly warm to pour on top. When done, your layers look like this: Pretty or what? ...and don't you say what. Cut the jello into squares. Use your fingers to pull the jello from the edges and they should come right out. Plate and serve. The kiddos (me included) loved to peel each layer off and eat individually. I absolutely loved how they turned out. I definitely will make this recipe again. Can't you see this with different colors for different holidays?
