Les haricots sont cuit très rapidement pour conserver tout leur croquant. Du coup, choisissez des haricots extra-fins; les miens étant un peu gros, j’ai augmenté le temps de cuisson. Mariés avec de l’orange et de la noisette, les légumes verts sont pleins de fraîcheur.Vous pouvez y ajouter un peu de fromage de chèvre, ou de féta pour un peu plus de gourmandise. Salade de haricots verts et pois gourmands, d’Ottolenghi: Préparation: 20 min Cuisson: 4 + 1 min Ingrédients/ 6 personnes 400 g de haricots verts extra-fins 400 g de pois gourmands 70 g de noisettes avec leur peau 1 orange bio 20 g de ciboulette ciselée grossièrement 1 gousse d’ail écrasée 3 c à s d’huile d’olive 2 c à s d’huile de noisette ou noix Sel, poivre Éboutez les haricots verts et les pois gourmands. Portez un grand volume d’eau à ébullition( sans la saler pour préserver la couleur des haricots verts). Faites blanchir les haricots 4 min dans l’eau (7 min s’ils sont plus gros) puis égouttez-les dans une passoire et rafraîchissez-les sous l’eau du robinet. Laissez égoutter et sécher. Répétez l’opération avec les pois gourmands en en les laissant qu’1 min dans l’eau. Torréfier les noisettes quelques minutes à sec, dans une petite poêle. Réservez. Une fois tiède, frottez-les dans un torchon propre afin d’éliminer la majeure partie des peaux. Concassez-les grossièrement au couteau. Avec un économe, prélevez des bandes de zeste d’orange en évitant la peau blanche amère. Détaillez chaque morceau en julienne très fine. Mélangez tous les ingrédients dans un saladier, remuez délicatement ,goûtez et rectifiez l’assaisonnement si nécessaire. servez à température ambiante. NB: Les légumes peuvent être cuits la veille et assaisonnés au moment de servir. Petits pois et fèves peuvent remplacer les haricots de la salade.
