No bake, fiber rich protein bars sweetened with dates and oh so easy to make! It's the perfect snack on the go! Ingredients: 16 dates 1/4 cup water 1 cup peanut butter 1/4 cup milk 2 cups oats 1/2 cup protein powder 1/3 cup chia seeds 1/4 cup unsweetened cocoa powder 1/3 cup semi-sweet chocolate chips Add dates to water and microwave on high 1 minute. Mash with a fork then microwave for another minute. Mash until smooth, then add the peanut butter and milk. Combine the remaining dry ingredients in a large bowl. I used unflavoured protein powder, but chocolate flavoured would be rad! Add the date mix to the dry and combine well. Line a 9 X 9" pan with plastic wrap. Spoon globs of the mix into the pan and spread with a spatula. Cover with a second piece of plastic wrap and firmly press down with something flat like a book, or I like to use this mini loaf pan. Refrigerate 30 minutes then lift out of pan, place on a cutting board and cut into 24 bars about 1 X 2" each. Store in refrigerator. Original recipe from smartnutrition.ca
