I saw this recipe almost 3 months back and ever since, it was on my mind. In fact, I had bought my first pack of dried apricots just for this recipe and while I still kept fiddling with the thought of making it, the apricots managed to score highest on my favorite dry fruit list and now a regular in my pantry. Some more months would have still passed by before I could make this pickle when finally yesterday I did some jar shopping and I knew now is the time. Not that the recipe is difficult to make, in fact it is one of the simplest ones to make. I was just occupied with a few more important things and today when I finally made it, I realize what I had been missing all this while. The recipe was shared by a very talented fellow food blogger Amrita Gill which was passed on to her by her Iranian friend in her college days. A must try recipe, especially if you love your pickles and chutneys! Ingredients 2 cups carrot grated 1 1/2 cups fine grain sugar 1/4 cup balsamic vinegar (can be replaced with sugarcane vinegar or apple cider vinegar or any sweet vinegar) 1/3 cup dried apricots sliced 1/3 cup raisins 1/3 cup dates (I did not add as I do not like) 3 cloves garlic finely chopped 1/4 tsp garam masala powder 1/2 tsp turmeric powder 1 tbsp heaped red chilli powder Salt to taste Direction Soak the apricots and raisins in the vinegar overnight in the refrigerator, preferably in a glass bowl. Heat a pan and add the carrots followed by the sugar. Strain the soaked apricots and raisins and add the soaked vinegar from the bowl. Let the mixture come to a boil while stirring continuously on a medium flame. Now add the chopped garlic, soaked and strained fruits followed by the spices. Mix everything well and let the mixture reduce while stirring in between. When all the liquid evaporates, remove from heat and transfer to glass jar or bowl and keep the lid open. Refrigerate once completely cool. Enjoy with a wide range of Indian breads, fritters, samosas, or anything that you fancy!

Store bought plum sauce mostly has viscous brown to dark brown in color. Unlike when we make it at home, the color tends to light red to dark one.. just like plum's color. İ have no idea what kind of plum used for making plum sauce at manufacture so they can produce light brown to dark brown color. But for sure my homemade plum sauce is definitely make from fresh plum, rich with spices and guaranteed keeper recipe for staple condiment for your pantry. So if you are Asian food lover or want to have something go along with your dimsum or roasted duck/ chicken.. make sure you keep this recipe ✍ My Homemade Plum Sauce Make about 600 ml Ingredients: 1 pound ( about 550 gr) fresh plums, pitted and chopped roughly 1 thumb fresh ginger ( about 5 cm), grated 1 medium yellow onion, finely chopped 3 cloves of garlic, finely chopped 2 Tbsp sweet chili sauce (more as your prefer) ¼ cup light soy sauce (not dark) ¼ cup + 1 tbsp brown sugar 1 tbsp worcestire sauce ¼ cup water 1 stick of cinnamon 2 star anise How to make: 1) Place everything except star anise and cinnamon in medium sauce pan and bring to cook about 7 to 8 minutes or until bubbling and plums get soft. 2) Using immerse blender blend them to smooth. You can use blender jar also, but make sure you let the mixture to room temperature first for your safety. 3) Add in cinnamon and star anise and bring to simmer over low heat until bubbling and thick ( about 10 minutes). Stirring continuously. 4) Remove star anise and cinnamon stick before storing into clean bottle/ jar. Pohonnya besar tinggi sprti pohon buah cherry. Selain dimakan segar, buah prem bisa diawetkan, misal dikeringkan atau dibuat pickle atau asinan...hmm...yummy deh pokoknya. Kadang saya juga buat selai lho dari buah prem ini. Pokoknya bisa dibikin macam-macamlah... besok bikin pie ah.....hmm... Tapi kali ini saya pengen bikin Plum sauce aja dulu. My Homemade Plum sauce (saus buah prem) Menjadi kurleb 600 ml Bahan-bahan: kurleb 550 gr buah prem segar, buang biji dan potong kasar kurleb 5 cm jahe segar, parut 1 bawang bombay ukuran sedang, cincang kasar 3 bawang putih, cincang halus 2 sdm saus sambal manis (tambahi sesuai selera) ¼ gelas light soy sauce (not dark) ¼ gelas + 1 sdm brown sugar (atau bisa pakai gula merah) 1 sdm worcestire sauce / saus inggris ¼ gelas air 1 batang kayu manis (5-7 cm) 2 buah adas bintang Cara membuat: 1) Masukkan semua bahan kecuali kayu manis dan adas bintang dalam panci sedang. Masak api sedang hingga mendidih dan buah prem lunak. 2) Blender hingga halus. Saya gunakan blender tangan. Jika pakai blender duduk, diamkan hingga suhu ruang agar aman. 3) Masukkan kayu manis dan adas lalu masak dengan api paling kecil sambil di asuk2 hingga mendidih dan mengental. 4) Simpan dalam botol atau toples.
