The flowers and decor are meant to complement your tea setting, not overpower the guests, nor interfere with the taste of the foods.While a white linen table cloth with matching 12-inch napkins is traditional, in our contemporary world, it is also appropriate to use whimsical cloths of various materials and designs.Set up opposite ends of the table with the tea cups and saucers, tea spoons, plates, napkins, sugar cubes, milk, and lemon slices.One end of the table will serve the hot tea. If room allows, serve one blend each, decanted, of a black, green or oolong and herbal infusion. By serving the tea decanted, there will be no need for tea strainers or slop bowls to remove the discarded tea leaves. The other end of the table will serve the hot coffee, with sugar cubes and milk/cream. Again, if room allows, offer your guests both regular and decaffeinated coffee.On a side table have a pitcher of cold, brewed iced tea with tall iced tea glasses.In the middle, on one side of the table, have serving trays, each containing a different type of savory and finger sandwich, crusts off.Balance the menu with no two breads or fillings duplicating one another. And for goodness sake, if you live in a southern state, do not forget the deviled egg tray!In the middle, on the other side of the table, have serving trays, each containing a different type of finger/bite size sweets. Lemon pound cake and brownies may be cut into bite-size servings.On either a side table or next to your savory trays, set up baskets of mini, bite-size, scones, muffins and slice-finger style fruit breads. You may also include cheese sticks. Place bowls of clotted cream or Devonshire cream and jam, with small serving spoons, and bowls of large strawberries adjacent to the breads and scones.Place coordinating service pieces next to or near the trays.You may use place cards, on the tables, to identify each item and tea served.Sherry, port, and champagne, if desired, may be served on trays or passed by the wait staff.Remember to keep the menu simple with easy to pick up “finger foods” that do not require utensils.A buffet tea needn’t be expensive, nor time consuming to prepare. There are many marvelous sources available by mail order and in your local supermarkets. Easy Make Ahead Afternoon Tea Sandwiches plus pro tips, recipes, presentation ideas and more. Everything you need to know for your next afternoon tea.
Today I want to show you how to turn a plain scone into a really pretty treat that looks fancy but is so easy! I used King Arthur Flour's recipe for Cream Tea Scones, baked them in a mini bunt pan, and filled them with Blackberry Whipped Cream! I have a passion for "pretty baking" and am always trying to turn my baked goods into little works of art for the Tea Table! I was really happy with how these turned out! The baking pan that I used can be found here or you can use your muffin pan. You won't get the design at the top but it will still be pretty! I rolled out my dough to 3/4" then using my large cookie scoop (1 3/4" wide) as a cookie cutter I punched out 12 circles, re-rolled the dough and got 4 more, 16 total. (You can use a cookie cutter instead.) Then I pressed the circles into my lightly greased pan that had been sprinkled with some sparkling sugar. (The sugar is optional) The filling is easy peasy and goes together in 1-2-3! Carefully slice scones in half and place on a baking sheet. Whip ingredients together and spoon or pipe onto bottom halves, then replace top halves. Pipe or spoon a bit more of the filling onto the top halves and decorate each with a blackberry! These are the perfect scones for an early summer tea party and look so pretty served on some lovely vintage plates! BLACKBERRY CREAM TEA SCONES For Scones: 3 cups unbleached all purpose flour 1 tablespoon baking powder 1 teaspoon salt 1/4 to 1/3 cup granulated sugar, to taste 1 teaspoon vanilla extract 1 1/3 to 1 1/2 cups heavy or whipping cream coarse white sparkling sugar For Filling: 1 cup heavy whipping cream 1 tablespoon powdered sugar 1/4 cup seedless blackberry jam Preheat oven to 425 degrees F. Lightly grease bundt/muffin pan and sprinkle each cavity with coarse white sugar if desired. Whisk together the flour, baking powder, salt, and sugar. Sprinkle the vanilla over the dry ingredients, then drizzle in the cream, tossing and stirring gently all the while and adding just enough to make a cohesive dough. There shouldn't be any dry flour in the bottom of the bowl, but the dough shouldn't be particularly sticky, either. On a lightly floured work surface, roll out dough to 3/4" thickness. Using a large cookie scoop like you would a cookie cutter, punch out circles of dough and place into prepared bundt pan. Press gently into each cup. For best rising, place the pan of scones into the freezer for 15 minutes. Bake the chilled scones for 14-15 minutes until they are starting to brown. Remove scones from oven and let cool in pan for 5 minutes, then remove to a cooling rack. Makes 16 scones. While the scones are cooling prepare the filling: Into a chilled bowl with chilled beaters place heavy cream and powdered sugar and beat until you get stiff peaks. On slowest setting, beat in blackberry jam just until combined. Place filling in a large piping bag fitted with a star tip. Slice cooled scones in half, pipe desired amount of filling on bottom half, replace top half, pipe a pretty swirl of filling on top and garnish with a blackberry. Place these on the tea table and prepare for ooooohs and aaaahs! So yummy and delicious!! Enjoy!!

Today I have a treat for you! I had the pleasure of reviewing the new book Tea with Jane Austen by Pen Vogler; food photographer Stephen Conroy. This book, though little in size, packs a lot of baking for delicious tea time treats. The book was inspired by the novels and letters of Jane Austen. In this 64-page book are recipes for cakes and pastries based on authentic recipes from the Regency era which have been updated for the modern cook. The book has 22 recipes in total in which 6 are from Martha Lloyd's Household Book. Martha Lloyd was Jane Austen's dear friend and lived with her many years penning a collection of recipes called Martha Lloyd's Household Book. Some of the recipes included are English Muffins based on the muffins, served with after-dinner tea in Pride and Prejudice, a Buttered Apple Tart as served by Mr. Woodhouse to Miss Bates in Emma, and Jumbles inspired by the cookies enjoyed by Fanny in Mansfield Park. The original recipes are given along with the modified versions. I chose Jane's Sponge Cake to bake today with tea. The book states that the Oxford English Dictionary noted the first recorded use of the word "sponge cake" is by Jane, writing to her sister Cassandra. The recipe is taken from Martha Lloyd's Household Book. The cake is essentially a pound cake. They are often topped with just a dusting of powdered sugar. Mine came out to perfection. I have actually made two other recipes for the traditional tea time sponge cake and they both flopped. This recipe was a winner. Simply topped with fruit and powdered sugar it was a tea time treat befitting a relaxing afternoon spent reading this little treasure of a cookbook. My teacup reminds me of the Regency era. It is by Grace's Teaware. I thoroughly enjoyed the recipe book. Filled with interesting introductions to each recipe and delightful photography. I really loved the addition of adding the original recipes in their handwritten form. I always love reading historical recipes. I am a history nerd. I highly recommend this book for any tea lover, but if you are also a fan of Jane Austen it is a must read! I know a lot of you tea lovers are also Jane Austen fans, like me. It would make a perfect Mother's Day gift!
