BIZCOCHO de albaricoque y CEREZAS ingredientes: 1/2 cup yogur cremoso 1/2 cup aceite de girasol 1 1/2 harina 3 huevos 1/2 cup miel ecológica 1/2 sobre levadura química(mirar indicaciones en el sobre) 1/2 tsp canela en polvo 1/4 tsp sal 150 gr cerezas 7 - 8 albaricoques (según tamaño) Precalentar el horno a 200 º. Lavar las cerezas y los albaricoques y deshuesarlos. Partir las cerezas en dos y los albaricoques en dados de 1cm aprox. Reservar un par de albaricoques para la decoración final. Reservar. Tamizar la harina con la levadura y reservar. Calentar la miel al baño María muy suave. En un bol mezclar el yogur el aceite la miel y la canela. Batir ligeramente los huevos e incorporarlos a la mezcla. Mezclar bien todos los ingredientes. Añadir la harina poco a poco y batir con unas varillas hasta que quede una mezcla suave y sin grumos. Enharinar el molde que hayas elegido y verter la mezcla dentro. Dar unos golpecitos encima de la mesa con el molde para que la mezcla se asienta bien. Decorar al gusto y hornear durante unos 40 min. Si ves que se está tostando demasiado por arriba puedes poner un poco de papel de aluminio por encima con cuidado de no tocar la superficie del bizcocho(dale forma ahuecada como de sombreo) Pinchar con un palito de madera y si sale seco estará ya listo. Dejarlo dentro del horno apagado un ratito y luego sacarlo y ponerlo en una rejilla para que se enfríe del todo. Se puede acompañar con helado de vainilla o nata, o con crema de yogur y queso fresco.
