En ik had het pas nog gemaakt, kun je nagaan. Toen ik terug kwam uit Aruba ben ik dan ook meteen naar de groenteboer en supermarkt gesprint om mijn ingrediënten in te slaan. Ik moest en zou soto ajam, en wel nu! Kennen jullie dat, dat je zo’n onwijze craving hebt voor een bepaald gerecht? Soto ajam is één van mijn favoriete Indische recepten dus ik besloot om meteen maar een hele…
Zo maak je de échte traditionele erwtensoep. Oma's Oud-Hollandse erwtensoep (snert) is het lekkerst en niet moeilijk om te maken. Het vergt alleen een beetje geduld. ;)
Bereiden:Snijd de wortel, de selder, de prei, de ui en de gember in grove stukken. Stoof de garnalenkoppen aan in een scheutje olijfolie. Voeg de groenten, de gember, een takje tijm en een blaadje laurier toe en kruid met een snuifje chilipoeder. Laat even stoven en zet vervolgens onder met water. Breng aan de kook en laat minimum een kwartiertje pruttelen. Hak de champignons en de sjalot fijn. Stoof ze gaar in een scheutje olie. Voeg vervolgens de ricotta en een eidooier toe zodat je een stevige vulling verkrijgt. Snijd de Chinese kool in reepjes. Blancheer kort in gezouten water. Spreid de wontonvelletjes uit op een uitgewrongen, vochtige handdoek. Schep een lepeltje van het champignonmengsel op elk velletje. Plooi dicht en druk de lucht er zo veel mogelijk uit. Snijd het overtollige deeg weg. Kook de wontons enkele minuten in gezouten water. Zeef de garnalenbouillon. Serveren: Schep enkele reepjes van de Chinese kool in een soepkom. Schep er de garnalenbouillon en de wontons in. Werk af met enkele druppeltjes sesamolie, sojasaus, fijngehakte koriander en enkele verse grijze garnaaltjes .
