There are two ways to deal with Christmas, some stay at home and celebrate with family and friends and others travel as far away as they can. I belong to the first group, I'm too bound by tradition and memories to let go of my annual rituals and jump into something completely new.
Same great flavors. Fresher, more vegetable-forward presentation.
Hugbear shared this recipe in Kitchen Capers and I've been making this for our breakfast then. After stopping for a while and trying out new recipes, I totally forgot about this until I made my red bean paste. In the past, when I cook this, I only sandwich with peanut butter, cheese or kaya, never used red bean paste before. Since I have some extra paste in the freezer, I decided to make this for our breakfast today. This is how the batter looks like after leaving to rise in the fridge overnight. Cook till you see the top is bubbly and set (this pic below is not set yet) Spread desired fillings. Instead of roasted peanuts with sugar, I just juse peanut butter. Here's one with Nutella. And my favourite red bean paste! I usually cook 1.5X or double the recipe for my family of 2A + 2C. Min Jiang Kueh Ingredients 150 g Top Flour (I replace with all purpose flour) 10 g Tapioca Flour (can replace with corn flour) 250 ml Water 2 tbsp Sugar 1/4 tsp Salt 1/2 tsp Alkaline Water (I omit) 1/2 tsp Yeast Method Mix all ingredients and leave to rise for 2 hours. (I leave mine in the fridge overnight) Lightly oil a flat frying pan. Pour some of the flour mixture into the frying pan and swirl the pan to coat it evenly. Use small fire to cook until the bottom is golden brown; Sprinkle the filling on the pancake and fold it into half. Cut into small pieces to serve.

Searing prepackaged scaloppini usually guarantees two things: bland flavor and leatherlike chew. For a version that was a cut above the rest, we had to revisit the butcher case.

Traditional savory pie made at Easter time to mark the end of lent and fasting. It takes more time than skill but well worth the effort. First you make a pepper crust. for the crust: 2 cups of flour 2 eggs 3 tablespoons olive oil salt and lots of fresh cracked black pepper add water as needed knead until smooth, wrap in plastic wrap and set aside to rest Next make the filling, I used: 2lbs proscuttini (Italian black pepper crusted ham) 1 stick pepperoni 1 stick sopprasade 1 fresh Italian basket cheese 1 fresh mozzarella ball 1 cup grated parmesane 10-12 eggs lots of fresh chopped parsley now is where all the work come, dice all the meats and cheeses as small as you can toss in a large bowl, next beat the eggs and add the parmesane and parsley mix into the meat and cheese mix well. Now grease a casserole well roll out the dough and line the casserole, add the meat and cheese mixture now you can either put a top crust or make a lattice top. Bake around 1 1/2 to 2 hours or until set that will depend on how large it is a knife inserted into the center should come out clean. *only add enough egg mixture to coat the meat and cheese ** place casserole on cookie sheet with sides because the egg is sure to leak out every time this will save you from scrubbing burnt egg off the bottom of your oven ***chill overnight this is meant to be eaten cold

A classic! Authentic Königsberger Klopse are made from ground veal, beef, and pork, along with a small amount of anchovies (or sardines or herring), chopped onions, bread crumbs, eggs, and spices. The traditional creamy sauce that accompanies the dumplings are made from the broth in which the dumplings were cooked, flour, cream, white wine, lemon juice, and capers. Delicious! Serve with boiled new potatoes and my Rotkohl recipe #108449 #108449. Also makes a great appetizer! A little history: Predecessors of the Königsberger Klopse date back to the Middle Ages. However, the East Prussian name Klops (Klops = meat dumpling) didn't originate until the 18th century. Königsberger Klopse was invented in the city of Königsberg (then the capital of East Prussia; today known as Kaliningrad, Russia) around 200 years ago. My German/Polish/French grandmother was born and raised in East Prussia, about 30 kilometers from Königsberg. This recipe is my version of her delicious Königsberger Klopse, which she never wrote down but with the help of my mother I was finally able to replicate. I have many fond memories of enjoying this dish (which the women would prepare) at family gatherings, Sunday dinners, and special occasions such as birthdays and anniversaries. Still one of my top favorites!!! I hope your family enjoys, too. (Helpful Tips: These tender meatballs are braised NOT fried. If halving the meatball recipe, you will still need the full amount of stock for braising and for the gravy. The meatballs are somewhat delicate & time consuming to make; have someone help to form them into balls, it is much easier that way! For appetizers make them smaller and serve warm from the crock pot with toothpicks, buttered rolls and Potato Salad recipe #309891 #309891. Freezes well).
A range of temperatures and textures—and meticulous seasoning—reinvigorate the classic summery salad from the Côte d'Azur. Cooking the potatoes for our salade Niçoise in heavily salted water ensured that they were well seasoned; using that same water for the green beans was not only efficient but also meant that some of the calcium ions in the beans' cell walls were displaced by plentiful sodium ions, breaking the links between the pectin molecules in the beans. This effect caused the beans to soften quickly while remaining a brilliant green. Breaking with tradition, we flattened the cooked potatoes and crisped their exteriors in a hot skillet while our eggs cooked to a jammy, not hard-cooked, consistency. The mixture of hot and cold, crisp and creamy elements made the salad more interesting to eat, and the punchy, lemon-heavy vinaigrette, spiked with anchovies to enhance its savoriness, complemented the hearty components perfectly. A final sprinkling of briny capers and olives gave our salad traditional Mediterranean flair.
