Deze week ontving ik van de plaatselijke jager een vers geschoten wilde gans. Na het slachten had ik onder andere een heerlijk stuk ganzenborst. Het is zonde om wild vlees te voorzien van allerlei extra smaken, omdat de wildsmaak er dan onder lijdt. Het volgende recept is heel erg basis, maar daarom niet minder lekker. Voeg daarbij de rooksmaak van cederhout en je hebt een heerlijk stukje gerookte wilde ganzenborst.
