It's 3pm: what's your afternoon refreshment of choice? Stop that soda habit and make your own with our three recipes for DIY-ing your own herbal sodas, which are easy enough to whip up in an afternoon, taste amazing, and look pretty beautiful all assembled if we do say so ourselves. Flavored with muddled herbs, fresh fruit, and spicy (homemade!) simple syrups, we developed these recipes with the help of some of our recent favorite reading resources: The Herbal Home Remedy Book, The Cocktail Club, and A Little Piece of Earth: How to Grow Your Own Food in Small Spaces. Taking cues from all three books, we got inventive by experimenting with natural ingredients, taking a mixologist's approach to combining unexpected flavors, and, most importantly, thinking outside of the grocery store when it comes to having a supply of fresh ingredients (do you know how insanely easy it is to have fresh herbs all the time with an apartment window herb garden? A Little Piece of Earth is full of great tips there…) Read on for three delicious recipes that are refreshing any time of the day, or add a splash of something extra in there if you're looking to upgrade your happy hour! Photos by Michael Persico Cucumber, Mint, and Basil Soda Serves 3 Ingredients: 3/4 cup simple syrup (read on for simple syrup recipe) 1/2 large cucumber 12 fresh mint leaves 6 fresh basil leaves 3 cups soda water Ice cubes Directions: Prep simple syrup by combining one cup water and one cup sugar in a small saucepan. Bring to a boil — it will first be grainy, then get cloudy, then get totally clear. When it's clear, it's ready! We went ahead and made the simple syrup ahead of time so it would be cool enough to mix into the drinks and not dilute it. It's easiest to make simple syrups in big batches and then just store in the fridge until you need it — you can make it in any amount so long as you keep the 1:1 sugar to water ratio. It will keep for about a week in the fridge. You can also flavor the simple syrup for a little extra kick — make it as usual but at the end, add in a couple handfuls of a flavoring into the saucepan and let steep for 30 minutes before straining and refrigerating. For this one, we flavored the simple syrup with cucumber slices (about 1/4 a large cucumber) and 6 fresh mint leaves. To serve, finely chop up a handful of fresh basil and mint leaves and muddle at the bottom of each glass, using a cocktail muddler to break down the leaves. Add 2 Tbsp of simple syrup to each glass, then top with soda water, give a quick stir, and chill with ice cubes. Garnish with a cucumber slice and a sprig of mint — serve and enjoy! Is it just us or is mint, basil, and cucumber the ultimate in refreshing combinations?! Pink Peppercorn and Thyme Soda Serves 4 Ingredients: 4 whole star anise 1 tbsp. whole pink peppercorns .5 tbsp. whole cloves 1 cup water 1 cup sugar 1/4 cup fresh thyme sprigs (plus additional to garnish) 4 cups soda water Ice cubes Directions: Make your simple syrup (again we did this ahead of time so we could have time to chill it!) To make it a little spicy (and to give it a nice pink color), after you make the syrup add in your anise, pink peppercorns, and whole cloves. Steep for 15 minutes, then for the last 10 minutes of steeping add in a handful of fresh thyme. After it's done steeping, remove the thyme and strain out the spices, then chill for at least an hour. To prep, combine 4 tbsp of simple syrup with soda water and ice. Stir to combine. Garnish with fresh thyme sprigs and serve (this one is also great as a cocktail when paired with gin!) Rosemary-Blackberry Spritzer Serves 4 Ingredients: 1/2 pint fresh blackberries 4 springs fresh rosemary (plus extra to garnish) 1 ounce lime juice 1 cup water 1 cup sugar 4 cups soda water Ice cubes Directions: Make a basic simple syrup following the directions in the first recipe. Gently muddle blackberries and rosemary at the base of your cup using a cocktail muddler (we used a wooden spoon!) Add in a splash of lime, 3 tbsp. simple syrup, and fill with soda water and ice. Stir to combine. Garnish with extra blackberries and a sprig of fresh rosemary. If you're serving at happy hour, replace an ounce of the soda water with a splash of tequila. The final result is the perfect balance of sweetness from the blackberries, citrus, and the rosemary adds a really great additional dimension of flavor. So delicious! Shop Cookbooks
