When an opportunity presents itself.....take it! The Milky Way shining over Northern Ontario. With a new moon and very little cloud cover, all that was left was to search for a position over the water to provide a meaningful reflection. How many times is that going to happen?! All I needed was one time. At the right time. Take the moments when “the stars align” and give them your all. Then watch the greatness unfold. It’s not often I get the opportunity to be in Northern Ontario. The days are quiet and the nights even more so. Having my camera with me is the icing on the cake! A long weekend of camping in the great outdoors is a real treat. It’s been so long though, that I’ve forgotten how amazing the sights and sounds of the days and nights can be. Unfortunately, this particular weekend brought some rain with it, so there were limitations on some of my hopes for night photos and bright morning sunrises. The first two nights did not cooperate, with rain or drizzle most of the time. It’s hard to stay motivated to participate in “the great outdoors” when you’re cold and damp most of the time. There’s always hope for tomorrow, right? The problem is that the weather app was calling for much of the same. Oh great. The weather trifecta for three nights of camping. How wonderful……said no one ever. The last full day started off rather dreary. It wasn’t raining, so that was a huge improvement! One I would gladly take. But it was still cloudy and grey. Grey days have their advantages when taking photos, but I wasn’t seeing any of them working out for me that day. By the time dinner rolled around I could see blue patches start to appear overhead. I noted this without bothering to get my hopes up. Someone once said that “if you don’t have expectations, then you won’t be disappointed”. Good advice, and especially in this instance. The day wound down very quietly. Dinner provided a full belly and the camping gear was mostly dried out. Packing non-essentials for the trip home tomorrow had commenced. It wasn’t the win I wanted, but I’d take it. Time to light a campfire and reminisce on the soggy adventures of the weekend. Do you ever sit at the campfire and YOU are the one that always gets the smoke….or is that just me. Sitting there trading stories of the weekend provided for some laughs, and at one particularly good one, I gasped to catch my breath between giggles. And that’s when that big ol’ plume of smoke arrived at my side of the fire. I probably inhaled the whole thing. At least that’s what it felt like. The coughing fit that ensued was pretty darned impressive. I’d hazard a guess that a standing ovation from both Cheech and Chong could be a distinct possibility. Do you ever think sometimes that the universe is giving you subtle hints? Nothing too outlandish, but the odd nudge to push you in a direction. Do coughing fits count as subtle hints? I had to move away from the fire to catch my breath and cough out the remainder of the charred maple tree still swirling about in my lungs. It was a little brutal, to say the least. But apparently necessary, as I would learn. Once I was clear of the light from the fire, I was able to look out over the lake and gaze across at the reflection of the Milky Way on the still water. What? Milky Way? Yep. There it was in all its glory. The universe. The not-so-subtle nudge is acknowledged. Well would ya look at that! The clouds were gone and there were stars everywhere! In an instant I knew what my plan would be. Grabbing my gear, I headed to the truck for the short drive to the spot I had already picked out. The road was a little higher than the lake, and the point where our camp site was situated was about 200 yards in front of me, with a small bay in between. It was exactly how I pictured it would be. That lung full of smoke actually did me a favour and got me moving. Who knew? It nudged me into the opportunity to look around, and it was perfect. Thank you, Universe. Every once in a blue moon, I’ll get a hankering for a Salisbury steak TV dinner. But ugh, the sodium and all the other crap I can’t pronunciate that stares at me from the ingredient listing…I just can’t get passed it. So, when I came across a really great deal on ground beef this week – I thought why not make this retro classic at home? Seasoned beef patties are browned in a skillet, then mushrooms and onions are sauteed down in the pan drippings to create a rich and delicious brown gravy, that the “steaks” simmer in for a few minutes to finish cooking. I love the flavor that the red wine lends to the sauce – it plays off of the beef and mushroom flavors so well. I used portobello mushrooms since I happened to have some gorgeous ones gifted to me recently (thanks, Donna!), but cremini or even white button mushrooms could be substituted. I served alongside mashed potatoes and green peas to complete the TV dinner ensemble at home, but homemade macaroni and cheese would also be another classict choice. Everyone really enjoyed it! This recipe makes about 6 steaks – enough for us to enjoy for dinner , and a couple lunches worth of leftovers for us. Which is a major score, considering that they reheat so darn well. Another one for the recipe box, I’m always happy to find something new and different to make with ground beef! Print Salisbury Steak w/ Mushroom-Onion Gravy For the steaks: 1 1/2 lbs lean ground beef (at least 85/15) 3/4 cup finely chopped onion 1 cup fresh breadcrumbs 1 Tbsp Worcestershire sauce 1 tsp beef boullion granules (I love the ones found in the hispanic food aisle) 2 eggs, beaten 1 tsp kosher salt 1/2 tsp fresh ground black pepper 2 Tbsp butter vegetable oil For the gravy: 1 large yellow onion, sliced into 1/4-inch thick slices 8 oz portobello or cremini mushrooms, sliced 2 Tbsp tomato paste 1/4 cup flour 3 1/2 cups beef broth 1/2 cup dry red wine 1 tsp kosher salt 1/2 tsp fresh ground black pepper To make the steaks, combine the ground beef, chopped onion, breadcrumbs, Worcestershire sauce, bouillon, eggs, salt and pepper. Knead until all combined. Form into 6 oval patties and set aside. Melt butter and oil together in a large skillet on medium-high heat. Add beef patties and cook on both sides, until well browned (they’ll finish cooking in the gravy). Remove from the skillet and pour off any excess grease. Reduce the heat to medium and add in the sliced onions and mushrooms. Stir and cook until golden brown and somewhat soft, for several minutes. Add in the tomato paste and cook until starting to brown slightly, about 2 minutes. Add in the flour and cook for an additional minute. Slowly add the beef stock and wine. Stir and cook to reduce and thicken. Return the patties to the gravy. Spoon the gravy over the top and let them simmer for about 15 minutes to finish cooking. Serve with plenty of the mushroom-onion gravy piled on top.

Os sabores de maneirismo e de neoclássico fundem-se em dois corpos distintos, dando a entender o interregno do período barroco certamente devido à sua derrocada após o terramoto. É ostentada em esquina uma imponente pedra de armas dos Mascarenhas. Pertenceu ao Conde de Coculim e quase ruiu em 1755, desde então que tem sido votado ao abandono e vandalismo municipal. Há um projecto de "reabilitação", para nele fazerem um hotel, que segundo pude concluir pelos dados que foram adiantados, irá desvirtuar este edifício e transformá-lo num mamarracho pós moderno que irá agregar alguns edificios circundantes alterando toda a sua estrutura e o interior...o projecto foi chumbado, mas nunca se sabe quando dão o dito por não dito e vão avante com mais um crime de lesa património...embora justiça seja feita, seria ao mesmo tempo uma iniciativa que desde 1755 deveria ter sido tomada, o aproveitamento de um espaço nobre e com uma dimensão que revela a majestade que este bairro outrora teve...a sua cronologia mostra-nos a relíquia histórica que ninguém se presta a salvar... Séc. 17, 1ª metade - alguns autores consideram ser este palácio pertença dos condes de Linhares, cuja construção remontaria ao séc. 16, sobre a linha da antiga cerca moura (concretamente junto à denominada porta do Furadoiro, mais tarde referenciada como porta de Jesus) ; 1627 - o prédio era ainda designado "as casas do Conde de Linhares, junto ao Arco de Jesus", segundo Júlio de Castilho ; Séc. 17, 3º quartel - o palácio era propriedade do 1º conde de Coculim, D. There are definite reasons for delays for our prayers, just as there are mysteries for visions and miracles that we may glimpse as shooting stars for just a few moments in our lifetime. Those few who vividly remember the past and are able to see beyond, experience rather conflicting emotions: on one hand, reassurance about our remarkable journey, but on the other hand – massive contrasts between the worlds. But respect for our brief, confusing, painful, and sometimes even cataclysmic earthly life is as vital for our spiritual well-being as enjoying a blissful life. Until we get to know God’s abundance of power, unconditional love, happiness, freedom and wisdom, the purpose of our limitations cannot be fully understood. Especially suffering. The more we are connected to the infinite possibilities and our responsibilities in our Grand Reality, the more completely we are able to appreciate our being here—our mission—our calling—our purpose. Comprehending the significance of our living here forms peace and assurance of our oneness with everyone, the conviction that we are all part of that collective puzzle, part of one and the same Spirit, part of The Divinity, part of each and every one we will meet today on a train, in a bookstore, in a hospital or in a neighborhood park.
