Quiero contarles un poco la historia de los picarones. Estos son de origen peruano, de la época del virreinato español, se supone que reemplazaron a los buñuelos que eran un poco caros y muy trabajoso, convirtiéndose en el plato preferido de patrones y esclavos, luego de popularizada la receta se expandió por todo Perú y Chile convirtiéndose en un plato típico. La miel chorrea y cuando te lo llevas a la boca el sabor se extiende y te cautiva. Los picarones, famosos y dulzones, son un postre con historia en Lima, Perú. Difícilmente te podrás resistir después de haberlos probado. Limeños y turistas caen rendidos, porque los picarones son la estrella dulce en esta ciudad que tiene su arroz con leche y su mazamorra morada, pero como los picarones nada. Dorados, calientes y sabrosos. Así son. Durante el Imperio Inca se habrían hecho con camotes y el zapallo (calabaza), y a inicios de la conquista se combinaron con ingredientes traídos por los españoles como la harina de trigo. En la tradicional Procesión del Señor de los Milagros que se realiza en octubre -desde el siglo XVII- pregoneras morenas comenzaron a ofrecerlos. Hay quienes creen que los picarones ya llevan más de 300 años entre nosotros. Picarones rinde 8-10 porciones Ingredientes : ½ k (1 lb) de camote, pelado ½ k (1lb) de zapallo, pelado ½ k (1 lb) de harina 3 cucharadas de levadura 2 palos de canela 4 clavos de olor 2 cucharadas de anís 3 cucharadas de azúcar Pizca de sal 2 huevos ligeramente batidos Aceite, la cantidad necesaria Miel ½ k (1 lb) de chancaca 1 taza de azúcar rubia 4 clavos de olor 2 palos de canela 2 trozos de cáscara de naranja 2 granos de pimienta de chapa 4 tazas de agua Preparación: Poner a hervir abundante agua en una olla con canela, clavo y anís. Dejar hervir 10 minutos y colar reservando el agua. En esta agua cocinar el camote y el zapallo y una vez cocidos retirar de la olla y pasar por un colador. Reservar alrededor de 2 tazas del agua de cocción. Dejar enfriar. Mezclar en un bol la levadura con el líquido de cocción que se reservó y el azúcar. Dejar reposar 15 minutos. Colocar el puré de camote y zapallo en un bol grande, agregarle la sal, la mezcla de la levadura y los huevos, batiendo manualmente hasta que todo esté bien unido. Agregar la harina envolviendo y seguir moviendo vigorosamente hasta que se forme una masa suave y elástica que no se pega a los dedos. Colocar un lienzo húmedo encima y dejarlo reposando durante 1 hora o hasta que doble el volumen. Calentar abundante aceite en una sartén grande. Tomar porciones de masa con la mano humedecida en agua con sal y dejarla caer en la sartén formando un hueco en el centro (como una rosca o aro). Esperar que doren y darles vuelta. Se sirven 3 picarones rociados con miel. Miel: Cortar la chancaca en trozos y agregar el azúcar, clavo, canela, cáscara de naranja, pimienta y agua. Llevar a hervir hasta que tome punto de jarabe (200°F – 110°C) alrededor de unos 20 a 25 minutos. Colar la miel y servirla encima de los picarones. No te olvides de dejar tus comentarios !!
