Vi danskere har i den grad taget det thailandske køkken til. Alt fra stegte ris og satays (kyllingespyd) med peanutsovs til dybstegte rejer og pad thai bliver guffet i lange baner. En af vores favoritter er thai mad, der kombinerer den milde kokosmælk med den ildsprudlende røde karry. Når der ligger noget mørt kød og nogle sprøde grøntsager og svømmer rundt i sådan en sovs, er det let at drømme sig tilbage til en strand på Koh Samui bare ved at lukke øjnene. Vi har brugt svinekød i denne ret (koteletter skåret i strimler), men du kan også bruge kylling eller kæmperejer – eller udelukkende grøntsager – for den lækre sovs smager godt med al slags fyld. En vigtig ingrediens i retten er thaibasilikum. Prøv at få fat i en pakke af dét. Thaibasilikum har en helt fantastisk aromatisk og eksotisk smag, som ikke kan sammenlignes med noget andet (og slet ikke med almindelig basilikum). Bladene skal bare vendes hele i retten til sidst. Vi foreslår i stedet den sprøde, danske glaskål, der godt kan minde lidt om bambusskud i gryderetter, samt rød peber og forårsløg. På den måde er vi klimabevidste og dansksindede, uden at det går ud over den gode smag. Som tilbehør til thailandsk svinekød i rød karry hører ris.
